Introduction: Wood ear fungus, also known as cloud ear fungus or sang er, belongs to the Auriculariaceae family. It has a soft and tender texture, delicious taste, and unique flavor. It is an important edible fungus in China and has a wide natural distribution and artificial cultivation. The fruiting body of wood ear fungus is thin, elastic, gelatinous, semi-transparent, concave, often ear-shaped or ring-shaped, gradually transitioning to leaf-like form. The base tapers into an earlobe shape and its surface is smooth or slightly veined, with a diameter ranging from 4 to 10 centimeters, and larger ones can reach over 12 centimeters. When dried, it shrinks significantly, with the upper surface turning dark brown to nearly black, and the lower surface appearing dark grayish-brown with a covering of very short hairs.
Wood ear fungusis rich in nutrients such as protein, fat, carbohydrates, vitamins, and minerals, making it highly nutritious. It is particularly high in iron content. Good quality wood ear fungus has a shiny black color on the front side and a gray color on the back. If both sides have the same color and lack luster, it indicates poor quality.
