Next, we add an appropriate amount of water to the pot and proceed with seasoning. We add 2 grams of salt, 1 gram of chicken powder, 1 gram of pepper powder, and 2 grams of dark soy sauce to enhance the color. We then bring the ingredients in the pot to a boil over high heat. After allowing the flavors to meld, we pour the mixture into a bowl and set it aside.

6.Now, we start cooking the noodles. We add an appropriate amount of water to a pot and bring it to a boil over high heat. Once the water is boiling, we add the noodles and gently stir with chopsticks to prevent sticking. During the noodle cooking process, we need to add water occasionally to maintain a sufficient amount of water in the pot. When all the noodles float up, indicating they are cooked, we reduce the heat to the lowest setting and use a strainer to scoop out the noodles. To ensure a firm and elastic texture, we rinse the noodles with cold water. This treatment will make the noodles more chewy and smooth. The final step is plating. We place an appropriate amount of noodles in a bowl and pour the previously prepared tomato and egg sauce over them. At this moment, the contrasting colors of red and yellow sauce against the white noodles create a visually appealing dish that stimulates our appetite. Finally, we sprinkle the finely chopped scallions as decoration, adding a touch of vibrant green color.
