Ingredients for Tofu Soup with Bok Choy

Cabbage 100g
tofu 100g
Ginger 5g
Dried chilli 3g
Chicken powder 4g
Peanut butter 15g
Sugar 3g
Salt 4g
Chopped green onion 3g
Step:

1.Prepare the required ingredients (cabbage, tofu, sliced ginger, dried chili peppers, sliced scallions, and sliced green onions).

2.Core the white cabbage, keeping the leaves intact. Slice the white cabbage leaves with a knife and wash them thoroughly to ensure they are clean.

3.Break the tofu into small pieces by hand and place them in a bowl for later use. The irregular edges of hand-broken tofu allow it to absorb flavors more easily, enhancing the overall taste of the dish.

4.Heat oil in a pot and add scallions, ginger, and dried chili peppers. Stir-fry them until the scallions become fragrant.

5.Add the white cabbage leaves to the pot and continue stir-frying until the leaves become soft.

6.Once the pot is heated, add water or broth and bring it to a boil. Then, add the tofu to the boiling liquid.

7.Add salt, chicken powder, and sugar to the pot. Increase the heat and bring the soup to a boil. Once boiling, stir in peanut butter, which will enhance the richness and flavor of the broth.

8.Once the broth has thickened and turned creamy white, you can sprinkle some chopped scallions on top of the soup. It is now ready to be served!

Tips:

1.It is best to use silken tofu because it has a better texture and smoother consistency, which adds to the overall enjoyment of the dish.

2.When cutting the white cabbage leaves, aim for uniform slices, neither too thick nor too thin. This ensures that the cabbage cooks evenly during the cooking process.

3.To enhance the flavor of the soup, you can substitute plain water with high-quality broth or chicken stock. This will infuse the soup with a richer and more savory taste.
