When the summer sun shines upon the earth and a gentle breeze sweeps through the rice fields, a longing for delicious cuisine stirs within me. And in this season, there is a fresh and unique dish that never fails to captivate me – boiled soybeans in soy sauce. Soybeans, small in size, yet full of flavor. They are carefully picked, washed, and boiled in boiling water until they become chewy and satisfying. Then, they are immersed in a steaming hot soy sauce broth for a moment. The soy sauce broth, with its simple yet fragrant ingredients, blends together scallions, ginger chunks, bay leaves, and Sichuan peppercorns, releasing an enticing aroma. In this richly spiced broth, the soybeans absorb the abundant flavors, becoming even more delicious and appetizing. As I hold a steamy soy sauce boiled soybean in my hand, warmth spreads through my fingertips and touches my heart. With a gentle squeeze, the beans detach from their pods, vibrant and dripping with freshness. I take a bite, savoring the crisp sensation that intoxicates my senses. The sweet and juicy liquid inside the beans bursts in my mouth, enveloping my taste buds, making them dance with delight.
Ingredients for marinated edamame

Scallion | two |
Ginger | 20g |
Dried chilli | 30g |
Star anise | 5g |
Fragrant leaves | 3g |
Tangerine peel | 5g |
Salt | 3g |
Sichuan Pepper | 3g |
Thirteen-spices | 5g |
Oyster sauce | 10g |
Dark soy sauce | 5g |
Light soy sauce | 3g |
Soy sauce | 3g |

Step:
1.Prepare the ingredients. (Soak edamame in warm water for 1 hour in advance, slice ginger, and tie chives)
2.Heat the oil in a pan and add the sliced ginger, spices (star anise, bay leaves, dried tangerine peel, Sichuan peppercorns), and chili. Stir-fry them until fragrant.
3.After stir-frying the spices until fragrant, add the soaked edamame and stir-fry them briefly. Then, add some salt (which can enhance the flavor of the edamame).
4.Add purified water to the pot, ensuring that it covers the edamame. Bring it to a boil over high heat, then reduce the heat to low. Add the thirteen-spice seasoning to the pot and let it simmer.
5.After simmering on low heat, add light soy sauce, dark soy sauce, regular soy sauce, and white sugar to enhance the flavor and add richness to the dish.
6.Add the scallion knots to the pot and bring it to a boil over high heat. Once boiling, let it simmer for about 30 minutes. After that, your delicious dish is ready to be enjoyed. A friendly tip: it’s even better when chilled and served with beer.
Tips:
1.Soaking time: Allowing the boiled soybeans to soak in the soy sauce broth for a certain period of time is beneficial for them to absorb the flavors fully. It is generally recommended to soak them for 2 to 3 hours, as this will make the soybeans more delicious.
2.Cold water bath: After boiling the soybeans, immediately remove them from the heat and place them in cold water for a bath. This helps maintain the fresh and tender texture of the soybeans and stops the cooking process.
