Ingredients for Spicy and Fragrant Grilled Ribs

Pork ribs 1000g
Chili powder 15g
Oyster sauce 8g
Soy sauce 8g
Garlic 6g
Ginger 8g
Sugar 4g
Salt 3g
Cooked sesame 8g

Steps:

1.Firstly, we need to wash the pork ribs thoroughly and cut them into individual pieces. This step requires patience as cutting the ribs too small will result in dry meat, while larger cuts may require longer grilling time. Place the chopped ribs in a bowl and set aside. Add 3 tablespoons of chili powder, 2 tablespoons of oyster sauce, 2 tablespoons of soy sauce, 1 tablespoon of salt, 1 tablespoon of sugar, and a suitable amount of ginger slices and garlic slices. Mix well using chopsticks or hands, ensuring that each rib piece is evenly coated with the marinade. Once mixed, place the bowl in the refrigerator to marinate for 4 hours, allowing the ribs to absorb the flavors.

2.After the marination time, remove the ribs from the bowl and neatly arrange them on a grill rack, ensuring they do not overlap or stack as it can result in uneven heating.

3.Preheat the oven to 230 degrees Celsius (450 degrees Fahrenheit) and let it preheat for 5 minutes. Then, place the ribs inside the oven. Close the oven door and bake for 20 minutes.

4.After 20 minutes, remove the cooked ribs from the oven and place them on a baking tray. Brush a layer of the marinade over the ribs and sprinkle some toasted sesame seeds on top. This will help preserve the spicy flavor and add texture to the grilled ribs. Once brushed, return the ribs to the oven and bake at 200 degrees Celsius (400 degrees Fahrenheit) for an additional 15 minutes.

Tips

1.When purchasing ribs, it is advisable to choose those with some fat content as they will yield more flavorful and moist grilled ribs.
2.For those who prefer a stronger spicy flavor, you can add some dried chili segments or chili powder to the marinade when marinating the ribs.
3.If the oven becomes too dry during the grilling process, you can add some water at the bottom of the oven or line it with aluminum foil to maintain humidity.
4.In the absence of a preheating function, you can still grill the ribs by placing them directly in the oven, but make sure to extend the grilling time as necessary.

It combines the culinary essence from both the East and the West, earning people’s love with its distinctive texture and delightful taste. In this dish, you can indulge in the tender meat, the rich spices, and the artful grilling technique. Accompanied by seasonal vegetables or main courses, it enhances your dining experience by showcasing the depth and flavor of the dish.
