Ingredients for Spicy Chili Beef Cubes

Beef 500g

Cooking wine 5g
Light soy sauce 5g
Dark soy sauce 2g
Egg one
Cornstarch 20g
Aginomoto 1g
Sugar 4g
Pepper powder 3g
Sesame 7g
Edible oil 100g

Steps:

1.First, let’s prepare the ingredients. Take a piece of beef and slice it into even thick pieces. Then cut them into long strips and finally dice them into small cubes. Pour in some water and let the beef soak for 20 minutes. The purpose of soaking is to remove any blood from the beef.

2.Take one green bell pepper, remove the stem, cut it in half, remove the seeds, and then slice it into long strips and further into small pieces. Do the same with the red bell pepper. The combination of green and red peppers provides a visually appealing dish. Take half an onion, cut it into chunks, and then slice it into small pieces. If the onion is sticking together, separate it with your hands and mix it with the green and red peppers.

3.Mince 5 cloves of garlic into small pieces. Cut a white part of a spring onion into small sections and set aside with the garlic. Prepare a small bowl and add a handful of Sichuan peppercorns and dried chili peppers.

4.Now, clean the soaked beef. Squeeze out any excess blood from the beef using your hands. After washing, drain the beef cubes using a colander and give them another squeeze to remove any remaining moisture. Set the beef cubes aside in a small bowl.

5.Next, marinate the beef cubes. Add 3 grams of salt, 2 grams of black pepper, 5 grams of cooking wine, and 5 grams of soy sauce to the beef cubes for flavor enhancement and to remove any unpleasant odors. Add 2 grams of dark soy sauce for color enhancement. Mix well with your hands until the beef is fully seasoned. Then, coat the beef cubes with a thin layer of egg white, which will help the coating adhere better and create a smoother texture. Finally, add an appropriate amount of cornstarch and stir in one direction to coat the beef cubes evenly. The cornstarch will help lock in the moisture of the beef.

6.After all the ingredients are prepared, we can start frying the beef. Heat oil in a pan or wok over medium-high heat until it reaches about 40% hot. Carefully add the beef cubes to the hot oil. Gently shake the pan and use a spoon to constantly push the beef cubes around to prevent them from sticking to the bottom. Fry the beef on medium heat for about 2 minutes until they turn golden brown. Once done, remove the beef from the oil, draining any excess oil, and set it aside.

7.Keep some oil in the pan. Once the oil is hot, add Sichuan peppercorns and dried chili peppers. Stir-fry until fragrant, being careful not to let them burn. Add the minced garlic and sliced spring onion to the pan and stir-fry until the garlic becomes fragrant. Then, add the sliced green and red peppers and onion to the pan and continue stir-frying until they are slightly cooked but still crispy.

8.Add the fried beef cubes back into the pan and quickly stir-fry to combine everything evenly. Now, it’s time to season the dish. Add 1 gram of MSG (monosodium glutamate), a small amount of sugar (for flavor enhancement, do not add too much), a little black pepper, and sprinkle in a handful of white sesame seeds. The beef cubes should already have enough saltiness from the marination, so there’s no need to add more. Stir-fry everything over high heat until well combined. Once done, transfer the Spicy Pepper Beef Cubes to a serving plate.

Tips

1.Cut the beef cubes evenly. Choose tender and chewy beef, and make sure to cut them into uniformly sized small cubes. This will allow the beef to absorb flavors more easily and ensure a consistent texture.
2.Before cooking, marinate the beef cubes with a suitable amount of light soy sauce, cooking wine, and a little cornstarch. This will help the beef absorb the seasoning thoroughly. Marinate for approximately 15-30 minutes.
3.Pay attention to the cooking temperature during the stir-frying process to avoid overcooking the beef, which can result in tough meat. High heat and quick stir-frying are key to achieve a nicely seared exterior while keeping the inside tender.
4.Choose chili peppers according to personal taste and preference (such as green peppers, red peppers, or hot peppers), and add some minced garlic, ginger, and scallion for added aroma. Seasonings can include light soy sauce, dark soy sauce, and a moderate amount of salt and sugar.
