Steps:

1.First, we need to prepare a fresh chicken drumstick. To enhance the taste and flavor, we chop it into small pieces, which also makes it easier to cook and eat. Put the chopped chicken pieces into a plate, sprinkle some white pepper powder, pour in some soy sauce and cooking wine, and gently mix it with your hands to let the chicken absorb these seasonings. Then cover it with plastic wrap and let it marinate for 10 minutes to allow the flavors to penetrate.

2.Heat the pan with oil, and once the oil is hot, add the chopped scallions, ginger, and garlic, and sauté them over medium-low heat until fragrant. After sautéing, add the marinated chicken pieces into the pan, trying to spread them evenly on the bottom of the pan to ensure even heating. Fry one side until golden brown, then flip and continue frying the other side until golden brown as well.

3.Once both sides of the chicken are fried, add two tablespoons of soy sauce, a tablespoon of dark soy sauce for color, a tablespoon of oyster sauce, and two tablespoons of cooking wine. Stir-fry them to evenly coat the chicken with these seasonings. Then cover the pan with a lid, reduce the heat to low, and simmer for 10 minutes, allowing the chicken to fully absorb the flavors of the seasonings.

4.After 10 minutes, remove the lid. If there is too much broth, you can turn up the heat and reduce it. Then add a suitable amount of sesame oil for aroma and sprinkle some chopped scallions as a garnish. Finally, stir-fry it evenly and transfer it to a plate.

1.Choose fresh chicken, preferably chicken leg or chicken breast, as they are tender and juicy, making them more suitable for simmering.
2.Choose fresh scallions and finely chop them. Heat some cooking oil in a pan, then add the chopped scallions and stir-fry until they become slightly yellow and release a rich aroma. This homemade scallion oil will have a stronger fragrance.
3.Maintain low heat while simmering, allowing the chicken to slowly absorb the flavors and become tender and juicy. Be careful not to simmer for too long, as overcooking the chicken can make it tough.
