Ginger | 4g |
Dried chilli | 5g |
Bean paste | 5g |
Salt | 2g |
Essence of chicken | 1g |
Pepper powder | 1g |
Chili oil | 5g |
Steps:
1.Today, I will share a recipe for stir-fried winter melon. First, prepare a piece of winter melon, remove the skin and seeds, and then slice the winter melon. Set aside on a plate. Cut half a green pepper and half a red pepper into diamond-shaped slices. Crush three cloves of garlic and finely chop them. Take a small piece of ginger, crush it, and then finely chop it. Set aside 3 grams of dried chili.
2.Once all the ingredients are prepared, we can start cooking. Bring water to a boil in a pot, then add the winter melon, green and red peppers. Blanch them in the water for about a minute, then remove and drain the excess water. A tip here is that blanching the winter melon and peppers in hot water prevents inconsistency in cooking.
3.Heat oil in a pan, and when the oil is heated to about 50% hot, add the ginger, garlic, and dried chili. Stir-fry until fragrant, then add 5 grams of doubanjiang (broad bean paste) and quickly stir-fry to release the red oil. Add the blanched green and red peppers and winter melon to the pan and stir-fry quickly. Now, it’s time to season the dish. Add 2 grams of salt, 1 gram of chicken powder, 1 gram of pepper powder, and drizzle 5 grams of chili oil to enhance the color. If you don’t like spicy food, you can use sesame oil instead of chili oil. Stir-fry briefly to mix the seasonings, then transfer the dish to a plate.
Tips
1.When choosing winter melon, look for ones with shiny skin and firm texture. Avoid selecting melons with scars or damages on the surface to ensure freshness and texture.
2.The cooking time for stir-fried winter melon should not be too long to prevent the melon from becoming overcooked and affecting the texture. Stir-fry over high heat to maintain the tenderness and crispness of the melon.
3.Stir-fried winter melon can be paired with other vegetables or meats to add layers of texture and nutritional value. For example, you can add carrot strips, green peppers, etc.
