Ingredients for Rice ball
Rice | 250g |
Sugar | 25g |
Salad dressing | 7g |
Steps:
1.Prepare the required ingredients – rice and granulated sugar. Soak the rice in water for 6 hours, allowing it to expand in cold water. Grind the granulated sugar into powdered sugar.
2.Heat cooking oil in a clean saucepan over high heat. The oil temperature should be fairly high for this dish, reaching at least 70% heat, with visible smoke on top.
3.Drain the soaked rice well and add it to the hot oil. Quickly stir with a spoon to disperse the rice. Once fried until crispy, remove from the oil.
4.Then, return the fried rice to the saucepan and sprinkle with powdered sugar, ensuring even distribution. Stir it again. Now, lower the heat and slowly cook the sugar until it melts and coats the rice.
5.After the sugar has melted and coated the rice, turn off the heat and let the rice cool in the saucepan. It will become crispy as it cools down. You can then add salad dressing or tomato sauce and mix well using chopsticks.
6.Wear gloves and shape the mixture into rice balls, pressing them tightly to ensure a round shape. These are the rice balls we used to often eat as children. A delicious snack is now ready. Let’s eat together!
Tips:
1.Soak the glutinous rice overnight; if it clumps, it won’t fry properly and will lack crispiness.
2.Maintain the right oil temperature for frying: if it’s too low, it will result in oily rice, while if it’s too high, it may burn easily.
3.Avoid letting the glutinous rice cool down; if it cools, it becomes challenging to separate and shape, and may not stick together well, leading to breakage while frying.
