Tomato 50g
Pepper 35g
Scallion 12g
Ginger 10g
Pickled Chilli 15g
Salt 5g
Ketchup 6g

Oyster sauce 8g

Steps:
1.Firstly, prepare the required ingredients, which include pickled peppers, ginger, scallions, chopped chili, and tomatoes.

2.After killing and cleaning the yellow croaker, make some diagonal cuts on its surface. If it is larger, cut it in half lengthwise. Once the cuts are made, proceed to deep-fry the fish.

3.Heat oil in a pan and stir-fry the ginger until fragrant. Then add the tomatoes, chopped chili, and wild pepper, and stir-fry them together over high heat until the tomatoes are mashed.

4.After everything is mashed, add purified water to the pan, along with a tablespoon of salt and half a tablespoon of tomato sauce. Bring it to a boil and then reduce the heat.

5.Add some pickled vegetables used for sour soup yellow croaker, a splash of light soy sauce. This should provide sufficient sourness, but if you prefer it tangier, you can add some vinegar. Let the soup simmer to thicken, then add the yellow croaker to the pot.

6.Allow the soup to thicken a bit more, ensuring that the fish is fully submerged in the broth. Cover the pot and simmer over low heat for 2 minutes. Usually, in restaurants, yellow croaker and soup are served separately, but at home, it’s more convenient to cook them together.

7.Once cooked, remove the lid. The yellow croaker will have a very tender texture. Now turn off the heat and transfer the dish directly to a hotpot. A delicious home-cooked dish is now ready.

Tips:
1.When boiling the fish, avoid constant flipping to prevent the fish meat from breaking apart.
2.Before boiling the fish, stir-fry the tomatoes until they are cooked, then add water. This will create a more flavorful broth.
3.Adding a small amount of white vinegar while boiling the fish helps to tenderize the bones and improve the overall texture.
