Yellow throat 220g
Onion 30g
Ginger 2g
Celery 4g
Pickled pepper 10g
Salt 2g
Light soy sauce 3g
Soy sauce 3g
Steamed fish soy sauce 4g

Steps:
1.First, prepare the ingredients: sour and spicy peppers, celery cut into sections, shredded ginger, shredded onion, yellow croaker. After purchasing the yellow croaker, make sure to wash it thoroughly with clean water.

2.Then, use a knife to remove the central white membrane. Gently scrape it off.

3.Once all the membranes are removed, proceed to slice the yellow croaker into shreds. Once all the slicing is done, it’s time to start cooking.

4.Place the yellow croaker in a pan and blanch it slightly. Avoid blanching it for too long, as it may become overcooked. Look for slight curling as an indication. Rinse it with cold water afterward.

5.Next, heat the pan and add cooking oil. Stir-fry the shredded ginger until fragrant, then add the sour and spicy peppers. Once they are fragrant, add the shredded onions and celery.

6.Add a pinch of salt and stir-fry the ingredients until fragrant. Then, add the yellow croaker.

7.Start seasoning by adding a small amount of light soy sauce, then stir-fry everything on high heat until well combined. This dish should be crispy and ideally have a sour and spicy taste. If you find the color too pale, you can add a little soy sauce.

8.Increase the heat to evaporate the liquid, reducing it until a thick and oily sauce forms. Then, reduce the heat, add a small amount of steamed fish sauce, and stir-fry everything on high heat until well-coated. Finally, transfer the dish onto a plate for serving.

Tips:
1.Chinese chives (jiu huang) or garlic chives (jiu cai) can both be used to stir-fry yellow croaker, as they pair well and bring out great flavors.
2.Adding a bit of crushed dried chili and diced pickled pepper can add layers of flavor to the yellow croaker.
3.Remove the white membrane from the yellow croaker. Just gently scrape it off with a knife.
