Silk noodles 100g
Tomato 200g
Ginger 5g
Scallion 5g
Beef rolls 300g
Dried chilli 5g
Ketchup 15g
Chili paste 5g
Salt 2g
Chicken powder 1g
Sugar 5g
Light soy sauce 10g
Starch 5g
Pepper powder 1g

Step:

1.First, you’ll need a bundle of vermicelli noodles. Soak them in hot water for 10 minutes to soften and absorb water. Next, take two tomatoes and make a cross-shaped incision at the top. Place them in hot water for 2 minutes to make it easier to peel off the skin. Remove the tomatoes from the water and use a knife to peel off the skin. Cut them into small, even pieces to cook them more easily. Finally, remove the softened vermicelli noodles from the water and set them aside.

2.Slice a piece of ginger thinly to release its flavor better. Then, prepare a few stalks of scallions, cutting them into even sections to cook them thoroughly. Lastly, get a box of beef rolls, as this is the main ingredient for this dish. With these ingredients ready, you can start cooking!

3.Add an appropriate amount of cooking oil to the pot. Once the oil is hot, add the sliced scallions and ginger segments. Sprinkle in a few dried chili peppers and stir-fry over medium heat to release their fragrant and spicy flavors. Then, add 15 grams of tomato paste and 5 grams of chili sauce. Then, add 10 grams of light soy sauce, adding a savory taste to the tomato broth. With these steps completed, the tomato broth is essentially ready!

5.Bring the broth to a boil over high heat to intensify its flavor. Add the beef rolls one by one, ensuring they don’t overlap to ensure even cooking. In a separate bowl, mix a little water with starch, then pour it into the pot while stirring constantly with a spatula, thickening the broth. Once the broth has thickened to a certain degree, it’s ready to be served. Before serving, check if the beef rolls are fully cooked and unrolled.

6.Evenly spread the softened vermicelli noodles on the bottom of a serving dish. Then, place the tomato beef rolls directly on top of the noodles, allowing them to complement each other and enhance the texture and flavor.

Tips:

1.Choose ripe and fresh tomatoes for a richer sweetness and acidity. If the tomatoes are not sweet enough, you can add a small amount of rock sugar to balance the flavor.

2.Before simmering the soup, you can blanch the beef to remove any blood and gamey taste. Place the sliced beef in boiling water for one minute, then remove and drain. This will make the beef more tender and eliminate some of the gamey flavor.
