These cranberry cookies are not just delicious snacks; they also have a unique story. It is said that on a sunny afternoon, a chef was making cookies and accidentally spilled some cranberries. Without paying much attention, he placed the cookies in the oven. Ingredients for Cranberry Cookies:

Butter 50g
Sugar 40g
Egg 20g
Low-gluten flour 100g
Cranberry 60g

 

Step:

1.Prepare a clean and large bowl to mix all the ingredients. Then, add softened butter at room temperature and white sugar into the bowl. Stir until well combined, and the mixture becomes light, fluffy, and the color turns white. This process requires patience and attention to ensure that all the sugar is fully dissolved in the butter, resulting in crispy cookies. Once the butter-sugar mixture presents an enticing pale yellow color, you can proceed to the next step.

2.Add the beaten eggs into the mixture and stir until well incorporated. Next, add the all-purpose flour and chopped dried cranberries into the butter-sugar-egg batter. Place the dough on a cutting board and push it forward with the base of your palm, spreading it outwards and gradually squeezing out the air. Then, shape the dough into a log with a diameter of approximately two centimeters and refrigerate for at least an hour. After chilling, take out the dough and slice it into small pieces, around five millimeters thick. Place them on a baking sheet.

3.Preheat the oven to 170 degrees Celsius and place the baking sheet inside. Bake for 20 minutes. This temperature and time will help achieve the ideal color and texture for the cranberry cookies. While baking, observe the oven carefully to avoid burning or overcooking. If using a smaller oven, you may need to adjust the temperature and time accordingly to ensure the cookies are thoroughly baked and acquire a golden, inviting hue.
