In the world of culinary delights, each ingredient possesses its unique charm. Today, I will take you into the realm of Stir-fried Celery and Pork, a seemingly ordinary yet flavorful dish. Stir-fried Celery and Pork is a classic Chinese dish that features celery and pork as the main ingredients. The fragrant essence of celery blends harmoniously with the savory flavor of pork, creating a captivating taste experience. While this dish may appear simple to prepare, it holds many secrets of culinary mastery.

Celery stir-fried meat ingredients

Celery 300g
Chili pepper 20g
Streaky pork 200g
Green onion 20g
Ginger 5g
Dried chilli 5g
Cooking wine 10g
Dark soy sauce 2g
Chicken powder 1g
Salt 2g
Light soy sauce 5g
Chili oil 3g

Steps:

1.Clean and cut 300g of celery into small, even pieces, ensuring they are of similar size for more even cooking. Cut the red chili pepper into thin strips to enhance the dish’s color and texture. These prepared celery and red chili pepper can be used as ingredients, adding flavor and texture to the dish when cooked with other ingredients.

2.Remove the skin from 200g of pork belly and then thinly slice it evenly. This ensures that the pork is easier to marinate and cook evenly. Slice the scallions and ginger into thin slices to enhance the dish’s aroma. Additionally, prepare 5g of dried chili peppers as a seasoning for later use, adding their flavor and spice during stir-frying. These preparations will help us in the next steps of the cooking process.

3.Fill a pot with water and add the sliced pork belly along with 5g of cooking wine. Cook on low heat to remove any blood residue from the meat. Once the water boils, skim off any impurities that rise to the surface. After blanching the pork for about one minute, remove it from the pot and rinse it with cold water to clean off any impurities.

4.Heat oil in a wok or pan, add the drained pork slices, and stir-fry continuously to release the fat from the meat. Add 2g of dark soy sauce to give the meat a rich color. Then, add the prepared ingredients and stir-fry over low heat until aromatic. Next, add the celery, sprinkle some cooking wine to remove any unwanted odors, increase the heat to high, and stir-fry quickly. Finally, add salt, chicken powder, and light soy sauce to season the ingredients. Stir-fry over high heat until everything is well seasoned, and then it’s ready to serve!

Tips:

  1. Control the heat: When stir-frying celery, it’s important to control the heat to cook it through while retaining its crispness. Stir-fry quickly over high heat until the celery changes color, preserving its natural juices and flavor.
  2. Proper seasoning: Adjust the amount of salt, soy sauce, and pepper according to personal taste. Be cautious not to add too much seasoning, as it may overpower the original flavors of the celery and pork.
