Ingredients for Stir-Fried Asparagus with Chinese Sausage Tips

Smoked sausage 300g
Asparagus 300g
Red pepper 12g
Ginger 6g
Garlic 6g
Edible oil 12g
Dried chilli 6g
Oyster sauce 5g
Salt 1g
Sugar 3g
Pepper powder 1g
Cooking wine 5g
Light soy sauce 5g
Starch 3g

Steps:

1.First, prepare 300 grams of Chinese sausage. Prepare a steamer and bring enough water to a boil. Place a steaming cloth or damp towel on the steamer rack, then place the Chinese sausage in the steamer. Cover with the lid and steam over medium-high heat for 10 minutes.

2.While the sausage is steaming, prepare some additional ingredients to enhance texture and color. Prepare 300 grams of asparagus, peel off the outer skin, and cut it diagonally into segments. This will make the asparagus easier to cook and result in a tender texture. Prepare a red bell pepper, wash it and remove the seeds, then cut it into approximately 1cm-wide strips for added visual appeal. If you prefer a non-spicy option, you can substitute with other non-spicy peppers or carrots. Slice a piece of ginger and a few cloves of garlic thinly with a knife, and set them aside in the same bowl. These seasonings will add aroma and flavor to the dish.

3.Once the sausage is steamed, remove it from the steamer and slice it. Be careful not to let any water drip onto the dish to maintain its cleanliness and hygiene.

4.Next, blanch the asparagus. Heat water in a pot with a small amount of cooking oil. Adding oil helps keep the asparagus vibrant green. Once the water comes to a boil, add the cut asparagus into the pot and blanch for approximately 30 seconds. After blanching, remove the asparagus and rinse it under clean water a few times. Rinsing with clean water will give the asparagus a crisp texture. After removing the asparagus, blanch the sausage in the pot for about 30 seconds, then pour out and rinse with clean water. Blanching the sausage will result in a softer and more tender texture.

5.Heat oil in a pan. Once the oil is hot, add the ginger, garlic slices, and a few dried chili peppers to infuse fragrant and spicy flavors. Add the sliced sausage and stir-fry for a few seconds. Pour in 5 grams of oyster sauce to enhance the flavor and stir-fry until the oyster sauce is incorporated. Add the blanched asparagus and stir-fry evenly, then start seasoning. Add 1 gram of salt, a little sugar, 1 gram of pepper, 5 grams of cooking wine to remove any fishy smell, and 5 grams of light soy sauce. Adjust the amount of salt based on the saltiness of the sausage. Stir-fry the ingredients together, then pour in a small amount of water starch mixture to help the seasonings adhere to the ingredients. Stir-fry to mix well before removing from the heat and serving.
