Ingredients for steamed pork ribs

Pork ribs 500g
Egg one
Salt 8g
Cooking wine 15g
Chicken powder 1g
Scallion 9g
Ginger 4g
Sichuan Pepper 3g
Star anise 2g
Dark soy sauce 2g
Rice 150g
Cinnamon bark 2g
Oyster sauce 2g
Spare rib sauce 5g

Steps:

1.Clean the pork ribs and cut them into small pieces. Place them in a bowl. Add 6 grams of salt, 10 grams of cooking wine, a little water, and massage the ribs to remove any fishy smell. Rinse with clean water. Drain the water and place the ribs back in the bowl.

2.Add 2 grams of salt, 1 gram of chicken powder, 5 grams of cooking wine, 2 grams of oyster sauce, 5 grams of Spare rib sauce, and a bunch of spring onions. Massage the spring onions to extract their juice and mix it with the ribs. Flatten a piece of ginger, add a few pieces of Sichuan peppercorn and black pepper, and massage the ribs again. If the color is not deep enough, add a few drops of dark soy sauce. Let the ribs marinate for 20 minutes.

3.Prepare a small bowl and add two handfuls of rice. Rinse and soak the rice in water. Drain the water from the rice. Heat a small frying pan and add the rice. Add two small pieces of star anise and a small piece of cinnamon. Stir-fry the rice until golden. Remove the spices. Transfer the fried rice to the small bowl and use a blender to grind it into fine crumbs.

4.Boil water in a pot and place a steaming rack on top. Take out the marinated ribs, remove the spices and spring onions. Beat an egg and mix it with the ribs. Gradually add the ground rice crumbs, coating the ribs evenly. Use chopsticks to pick up the coated ribs and place them on a plate. Pour the remaining rice crumbs on the plate.

5.Once the water in the pot is boiling, place the ribs on the steaming rack, cover the pot, and steam over medium heat for 40 minutes. After 40 minutes, the ribs will be cooked. Remove the ribs from the pot and sprinkle some chopped spring onions for garnish. Serve the delicious and fragrant steamed pork ribs.

1.Soak the pork ribs in a mixture of flour and water to remove any blood and eliminate the unpleasant smell.
2.Steam the pork ribs on high heat for approximately 50 minutes, adjusting the exact cooking time based on the size and quantity of the ribs.
3.Before serving, garnish with chopped green onions or cilantro.
