Ingredients  for spinach noodle roll

Spinach 150g
Flour 300g
Yeast powder 3g
Scallion 30g
Edible oil 15g
Salt and pepper powder 4g

Steps:

1.First, prepare the ingredients. Buy a fresh bunch of spinach, remove any impurities, and wash it thoroughly. Boil water and blanch the cleaned spinach for about 10 seconds until it becomes soft. Remove the spinach from the water and put it in a juicer, adding a suitable amount of clean water to make spinach puree.

2.Pour the spinach puree into a strainer to remove any residue. This will ensure a smoother texture for the final dough. In a clean bowl, add 300g of flour and 3g of yeast. Pour the strained spinach puree into the flour and knead it with your hands until well combined. Knead evenly and vigorously to ensure a smooth and uniform dough without any lumps. Cover the dough with a plate and let it ferment in a warm place for 1 hour.

3.Select a few fresh spring onions, preferably with good quality, vibrant green color, and no yellow leaves. Clean the spring onions and chop them finely. The chopped spring onions will enhance the taste and aroma of the dish.

4.After an hour, the dough will have fermented. Take out the dough, which will have various sizes of small holes. Sprinkle flour on the cutting board and knead the dough repeatedly to release the trapped air. Once the dough is smooth, divide it into two equal parts, taking out one part and kneading it a few times before flattening it. Roll it into an oval-shaped thin dough. Repeat the process with the other part, rolling it into thin dough as well.

5.Drizzle cooking oil onto the dough sheet and use a brush to spread it evenly. Then sprinkle a thin layer of salt and pepper, followed by flour and chopped spring onions. Roll the dough from the bottom upwards, creating a long roll. Cut the roll into evenly sized dough pieces.

6.Fill a pot with water and place a steaming rack inside. Cover the rack with a steaming cloth. Turn on the heat. Put the prepared spinach rolls onto the rack and steam them for 15 minutes. Placing the rolls in cold water gives them a chance for secondary fermentation, resulting in a fluffier texture. Also, avoid overcrowding the steaming rack to prevent them from sticking together.

7.After 15 minutes, turn off the heat. Let the spinach rolls sit for an additional 2 minutes in the residual heat, allowing them to cool slowly. This will make the rolls softer and more tender. Arrange the spinach rolls on a plate, ensuring they are compact and not overlapping. Serve the spinach rolls to enjoy with family or friends.

Tips

1.Ensure that the spinach juice is well-filtered to avoid affecting the texture and taste of the dough.
2.Knead the dough until it is well-mixed and has a moderate softness. If the dough is too soft or too hard, it will affect the making and texture of the steamed buns.
3.Shape the steamed buns beautifully by using a knife to create patterns on the surface, adding layers to the appearance.
