5.Drizzle cooking oil onto the dough sheet and use a brush to spread it evenly. Then sprinkle a thin layer of salt and pepper, followed by flour and chopped spring onions. Roll the dough from the bottom upwards, creating a long roll. Cut the roll into evenly sized dough pieces.
6.Fill a pot with water and place a steaming rack inside. Cover the rack with a steaming cloth. Turn on the heat. Put the prepared spinach rolls onto the rack and steam them for 15 minutes. Placing the rolls in cold water gives them a chance for secondary fermentation, resulting in a fluffier texture. Also, avoid overcrowding the steaming rack to prevent them from sticking together.
7.After 15 minutes, turn off the heat. Let the spinach rolls sit for an additional 2 minutes in the residual heat, allowing them to cool slowly. This will make the rolls softer and more tender.
