Scallion 3g
Cumin powder 3g
Light soy sauce 10g
Chili powder 5g
White sesame seed 5g

Steps:
1.Wash the potatoes and peel them. Slice them into thin pieces, approximately 2-3 millimeters thick. Submerge the sliced potatoes in clean water for 10-15 minutes to make them crispier when baked. Next, bring a pot of water to a boil and add a tablespoon of salt. Place the potato slices into the boiling water and blanch them for two minutes. This process helps to soften the potato slices. Once they feel smooth and slippery, remove them from the water and drain off excess moisture.
2.Spray a moderate amount of edible oil in the pan. Adjust the heat to medium-low and place the potato slices into the pan one by one. During the frying process, it’s important to constantly monitor the color and doneness of the potato slices. When one side has turned golden and is expanding, carefully flip the potato slices to continue frying. Once the other side has also turned golden, remove the potato slices from the pan and set them aside for later use.
3.Do not add oil to the pan. Pour the fried potato slices into the pan and add an appropriate amount of light soy sauce,  and chili powder. As the heat increases, the potato slices will become more fragrant and the color will gradually deepen. During the stir-frying process, constantly toss the potato slices to prevent burning or sticking together. Meanwhile, sprinkle a moderate amount of cumin powder and white sesame seeds while flipping, enhancing the aroma and texture. Once the potato slices have absorbed the flavors from the seasonings, add finely chopped scallion to the pan and continue stir-frying until well mixed.
