Steps:
1.First, prepare the ingredients. Clean and slice 200g of chicken gizzards. Cut a small bunch of green chili peppers, removing the stems, and slice them into thin strips. Slice a red bell pepper into thin strips as well, and mix it with the green bell pepper for color. Crush a few cloves of garlic and chop them into small pieces. Crush a piece of ginger and chop it into small pieces as well. Cut a small handful of pickled peppers into rings and mix them with the ginger and garlic.
2.Next, blanch the chicken gizzards. Fill a pot with enough water and add the chicken gizzards. Add 5g of cooking wine to remove any unpleasant odor, a pinch of salt, and 5g of white vinegar. Slowly bring the water to a boil to remove any blood from the gizzards. Once the water is boiling, skim off any impurities that rise to the surface. Next, season with a splash of cooking wine to remove any remaining odor, light soy sauce for seasoning, dark soy sauce for color, oyster sauce, and salt.
