Stir-fried Chicken Gizzards is a delicious and nutritious home-cooked dish. Chicken gizzards are rich in protein, vitamins, and minerals. Ingredients for Stir-fried Chicken Gizzards

Chicken gizzard 200g
Red pepper 25g
Green pepper 25g
Garlic 8g
Ginger 7g
Pickled Chilli 8g
Cooking wine 8g
Salt 3g
White vinegar 5g
Light soy sauce 5g
Dark soy sauce 3g
Oyster sauce 3g

Steps:

1.First, prepare the ingredients. Clean and slice 200g of chicken gizzards. Cut a small bunch of green chili peppers, removing the stems, and slice them into thin strips. Slice a red bell pepper into thin strips as well, and mix it with the green bell pepper for color. Crush a few cloves of garlic and chop them into small pieces. Crush a piece of ginger and chop it into small pieces as well. Cut a small handful of pickled peppers into rings and mix them with the ginger and garlic.

2.Next, blanch the chicken gizzards. Fill a pot with enough water and add the chicken gizzards. Add 5g of cooking wine to remove any unpleasant odor, a pinch of salt, and 5g of white vinegar. Slowly bring the water to a boil to remove any blood from the gizzards. Once the water is boiling, skim off any impurities that rise to the surface. When the gizzards turn white on the outside, remove them from the water, rinse them with clean water, and drain.

3.Heat the pan without adding any oil. Add the drained chicken gizzards to the hot pan and stir-fry over low heat for about 2 minutes. Keep shaking and stirring the pan to prevent the gizzards from sticking to the bottom. After 2 minutes, the gizzards should be cooked through and most of the moisture evaporated. Remove them from the pan. Stir-frying the gizzards until they are dry will make them crispier and more flavorful.

4.Heat oil in the pan. When the oil is about 50% hot, add the prepared chopped scallions, ginger, and pickled peppers. Stir-fry to release the fragrant and spicy flavors. Then add the green and red bell peppers and stir-fry until they are partially cooked. Add the cooked chicken gizzards and quickly stir-fry to evenly coat them with the flavors. Next, season with a splash of cooking wine to remove any remaining odor, light soy sauce for seasoning, dark soy sauce for color, oyster sauce, and salt. Stir-fry over high heat to bring out the flavors. Transfer to a plate and serve.
