Stir-Fried Yam, a simple yet flavorful delicacy. In the midst of a busy life, it brings tranquility and comfort. Ingredients for Stir-Fried Yam:

Yam 300g
Green pepper 6g
Red pepper 6g
Garlic 5g
Green onion 3g
White vinegar 5g
Salt 1g
Sugar 1g
Starch 3g
Small chili pepper 4g
Sesame oil 3g

Step:

1.First, let’s prepare the ingredients. Peel the skin off the yam and rinse it under running water, rubbing it to remove the slimy texture. Take it out and cut the yam into even, long strips. Soak the strips in clean water to prevent them from oxidizing and turning black. Cut one green pepper and one red pepper into long strips for a visually appealing color combination. Slice a few cloves of garlic thinly. Cut a section of the white part of a spring onion into crescent-shaped slices. Cut two small chili peppers into small pieces and set them aside with the garlic and spring onion.

2.Now, let’s blanch the yam. Fill a pot with an adequate amount of water and bring it to a boil. Add 5 grams of white vinegar to the boiling water, which will also help prevent the yam from oxidizing. Then, carefully add the soaked yam strips into the pot and blanch them over medium-low heat for about 1 minute. Remove the yam and rinse it with clean water.

3.Once the ingredients are prepared, we can begin cooking. Heat oil in a pan until it reaches about 50% heat. Add the spring onion, garlic, and chili peppers into the hot oil, stir-frying until fragrant. Pour a suitable amount of water into the pan from the side and bring it to a boil. Add the blanched yam, drained of excess water, into the pan. Season with 1 gram of salt and 1 gram of sugar for added freshness. Stir-fry briefly, then thicken the sauce with a small amount of water starch to better integrate the ingredients and seasonings.

4.Once the sauce thickens to a sticky consistency, drizzle a spoonful of sesame oil over the dish to enhance its color and flavor. Mix well, and then transfer the stir-fried yam onto a serving plate. Your delicious stir-fried yam is now ready to be enjoyed!

Tips:

1.After peeling the yam, it should be immediately placed in water to prevent oxidation and discoloration.

2.The blanching time should not be too long; boiling for about 30 seconds is sufficient to maintain crispness. Adding a small amount of white vinegar during blanching can help prevent yam oxidation.
