Ingredients for Shredded Potato Stir-Fry :

Potato 500g
Salt 3g
Thirteen-spices 5g
Edible oil 10g
Corn starch 50g
Chili pepper 50g
Coriander 20g
Minced garlic 5g
Dried chilli 3g
Sesame 3g
Light soy sauce 10g
Rice vinegar 10g
Sesame oil 3g
Chopped green onion 3g

Steps:

1.Peel the potatoes and slice them into thin slices. The thickness of the slices can be adjusted according to personal preference, but it is recommended to maintain a relatively uniform thickness for even cooking. The key to cutting potato slices is to use a sharp knife and try to maintain a stable cutting angle to obtain even and thin slices. Next, take out the sliced potatoes and cut them into julienne strips. This step is to make the potato strips more delicate and tender, adding layers of texture to the dish. Similarly, when cutting the potato strips, it is important to maintain a stable cutting angle and try to make each strip similar in thickness. Soak the cut potato strips in water for some time to remove surface starch. This step aims to reduce the stickiness of the potato strips during cooking, making them easier to separate. The soaking time can be adjusted based on the thickness of the potato strips and personal preference, usually around 10 minutes. After the soaking time is over, remove the potato strips from the water and gently squeeze out excess moisture with your hands. At this point, the potato strips will become drier. Then, put the drained potato strips into a large bowl. Add salt, thirteen spices, and cooking oil according to personal taste preferences. Gently mix well, ensuring that each potato strip absorbs the seasoning evenly. Finally, add an appropriate amount of cornstarch and mix well again. The addition of cornstarch enhances the texture of the potato strips and forms a thin outer layer during cooking, making them crispy and delicious.

2.Before cooking the potato strips, we need to prepare a large pot and add an appropriate amount of water. Turn on the heat and wait for the water to boil. When the water starts boiling, carefully place the cut potato strips into the pot. Make sure the potato strips are completely submerged in the water to ensure even heating and steaming. Turn the heat to high and cover the pot. Next, steam the potato strips for about 3 minutes. This time can be adjusted slightly based on the thickness of the potato strips and personal preference, but usually 3 minutes is enough to make the potato strips tender and chewy. During the steaming process, it is recommended not to frequently uncover the pot to prevent the loss of heat. Only open the lid when you are sure that the potato strips are tender and fully cooked. After steaming, gently insert a chopstick into the potato strips. If it goes through easily, it means the potato strips are fully cooked. At this point, you can turn off the heat. Carefully remove the steamed potato strips and drain excess water using a colander or sieve. The potato strips should now be soft, chewy, and have some elasticity.

3.The prepared red chili pepper needs to be cut in half first. Use a sharp knife to remove the top and bottom of the red chili pepper, then cut it in half lengthwise. Next, slice the red chili pepper into thin strips. Place each half of the red chili pepper flat on the cutting board, use the back of the knife or the blade to stabilize them, and then slice them into thin strips. You can adjust the thickness of the red chili pepper strips according to personal taste preferences, but try to maintain a relatively uniform cutting. Wash the cilantro thoroughly. Soak the cilantro in clean water for a while to remove any impurities and soil residues. Then remove the cilantro and rinse it with clean water. Place the cilantro on the cutting board and cut it into small sections. The length of these sections can be adjusted based on personal preferences, usually around 2-3 centimeters.

4.Prepare an empty bowl, ensuring that it is clean and oil-free. Next, peel the garlic cloves and finely mince them. You can use the back of a knife or a grater to flatten the garlic cloves, then cut them into minced pieces. Take some dried chili peppers, depending on personal preference, you can choose moderately spicy or spicier ones. Cut the dried chili peppers into small pieces or chop them finely to make it easier for them to release their spicy flavor. Add an appropriate amount of white sesame seeds. You can use pre-roasted white sesame seeds or raw ones. If using raw sesame seeds, you can roast them in a hot pan until they turn slightly yellow and emit a fragrant aroma. Then, chop the sesame seeds slightly with a knife to enhance their flavor and texture. Pour in an appropriate amount of light soy sauce, which is a common soy sauce that provides umami and salty flavors. Adjust the amount added according to personal taste preferences. Add an appropriate amount of rice vinegar, which adds acidity and a refreshing taste to the condiment. Add some sesame oil, which has a rich aroma and brings a unique flavor to the condiment. Sprinkle some chopped green onions, which add a fresh aroma to the condiment. Now, heat up some cooking oil.Once the oil is hot, carefully pour it into the prepared condiment bowl. The hot oil will help to release the flavors of the condiments and allow them to meld together better. Finally, use chopsticks or a spoon to stir the condiments evenly, ensuring that all the ingredients are thoroughly mixed.

5.Firstly, evenly spread the sliced red chili pepper and cilantro sections on top of the shredded potatoes. Then, slowly pour the prepared sauce over the steamed shredded potatoes. Make sure to evenly coat every part of the shredded potatoes with the sauce, allowing them to fully absorb and blend. Gently mix the sauce and shredded potatoes with chopsticks or a spatula. This way, the shredded potatoes will be able to fully absorb the flavors of the sauce, adding deliciousness and layers of texture. After mixing well, transfer to a plate, ensuring that the shredded potatoes are evenly distributed and showcasing their enticing color and aroma. Now, a plate of delicious Shredded Potato Stir-Fry is ready! You can enjoy it as a main dish, snack, or side dish, savoring its crispy yet tender texture and relishing the rich flavors from the sauce.

Tips:

  1. Steaming time: Adjust the steaming time of the shredded potatoes according to their thickness to avoid overcooking and making them too soft, resulting in a loss of texture.
  2. Choosing the right potatoes: Select potatoes with a fine texture and smooth mouthfeel, such as fresh new potatoes or red-skinned potatoes.
