Ingredients for scallion oil noodles

Scallion 6g
Garlic 4g
Noodles 200g
Light soy sauce 5g
Dark soy sauce 3g
Oyster sauce 3g
Sugar 2g
White sesame seed 3g

Steps:

1.Firstly, wash the scallions and cut them into approximately 2-3 cm long sections. Make sure to separate the white and green parts of the scallions. Then, slice the garlic and set aside. Also, prepare some fresh noodles.

2.Choose a sauce. In a bowl, add four tablespoons of light soy sauce, two tablespoons of dark soy sauce, one tablespoon of oyster sauce, and one tablespoon of sugar. Mix well with chopsticks or a spoon and set aside.

3.Heat a moderate amount of oil in a pan. Once the oil is hot, add the white parts of the scallions and the sliced garlic. Fry them on low heat until they turn golden brown. Then, add the green parts of the scallions and fry until they become slightly charred. At this point, the scallion oil in the pan will emit a rich aroma. Pour the prepared sauce into the pan and stir-fry over medium-low heat until small bubbles appear, indicating that the sauce is well cooked.

4.Fill a pot with cold water and bring it to a boil. Once the water is boiling, add the fresh noodles. Gently stir with chopsticks to prevent the noodles from sticking together. Cover the pot and let the noodles cook, removing the lid when the water returns to a boil. Cook the noodles until they are 70-80% cooked, then remove them from the water and rinse with cold water. Drain the excess water and set aside.

5.Place the cooled noodles in a bowl and add the freshly stir-fried scallion oil sauce. Mix well with chopsticks or a spoon, ensuring that each strand of noodle is coated with the sauce. During the mixing process, you can sprinkle some white sesame seeds as a garnish to enhance the texture and nutritional value. A delicious and satisfying bowl of scallion oil noodles is now ready to be enjoyed!

Tips

1.When cooking noodles, wait for the water to boil before adding the noodles. Use chopsticks to stir constantly to prevent sticking.
2.Put the shredded scallions into a heated pan and stir-fry over medium-low heat until they turn slightly yellow. Overcooking the scallions can make them bitter, so be careful with the cooking time.
3.After cooking the noodles, immediately rinse them with cold water to maintain their chewy texture.
4.If you like spicy flavors, you can add some chili sauce or chili powder while sautéing the scallion oil for the noodles.
