Refreshing Cold Marinated Enoki Mushrooms

Enoki mushrooms, slender like threads, possess a pristine white appearance. They resemble forest spirits, quietly growing in woody environments. Each stalk of enoki mushroom showcases a unique form, as if it were a beautiful tapestry woven by nature. When touched, they feel soft and elastic, providing a pleasant sensation.

Ingredients for  Cold Marinated Enoki Mushrooms:

Enoki Mushrooms 300g
Carrot 100g
Garlic sprout 50g
Garlic 10g
Aginomoto 1g
Sugar 2g
Light soy sauce 5g
Salt 2g
Mature vinegar 5g
Sesame oil 5g
Chili oil 5g

 

Step:

1.First, let’s prepare the ingredients. We will need a bunch of enoki mushrooms. Cut off the root part and rinse them thoroughly with clean water. It’s important to be patient during this step as enoki mushrooms are delicate and require careful cleaning to remove any impurities or residue. Once cleaned, separate the enoki mushrooms and set them aside.

2.Next, prepare a carrot. Slice the carrot into even thin slices, then julienne the slices into fine strips. We will also need a few stalks of garlic chives. Cut the garlic chives into 3 cm long segments. These garlic chive segments will serve as a garnish, adding a fresh taste to the marinated enoki mushrooms. Lastly, we will need a few cloves of garlic. Crush and finely mince the garlic cloves. This will intensify the flavor of the garlic and add a savory element to the marinated enoki mushrooms.

3.Now, let’s blanch the ingredients. Heat water in a pot and add a small amount of cooking oil. The oil will create a film on the surface of the ingredients, maintaining their vibrant color. Add the enoki mushrooms and carrot slices to the pot and blanch them for 40 seconds. Blanching helps remove impurities and residual flavors, resulting in a refreshing texture. Then, add the garlic chives to the pot and continue blanching for another 20 seconds. Garlic chives are tender and should not be blanched for too long to preserve their nutritional value. Once blanched, drain the ingredients and cool them down by rinsing with cold water. This step removes excess heat and impurities, ensuring the ingredients are fresh and clean.

4.Next, prepare a large bowl and add the minced garlic. Then, add 2 grams of salt, 1 gram of Aginomoto, and a small amount of sugar. Followed by 5 grams of light soy sauce and 5 grams of rice vinegar to enhance the tangy taste. Finally, add 5 grams of sesame oil and 5 grams of chili oil for a glossy finish. Pour the blanched and drained enoki mushrooms into the bowl. Mix everything well to ensure the ingredients are thoroughly coated with the seasonings. Once completed, transfer the marinated enoki mushrooms to a serving dish. Now, the refreshing Cold Marinated Enoki Mushrooms are ready to be served.

Tips:

1.Soak the enoki mushrooms in clean water for a moment, then gently rub them with your hands to remove any dirt or sand on the surface. Be careful not to over-rub as it may damage the shape and texture of the enoki mushrooms.

2.Trim off the tough ends of the enoki mushrooms. Cutting the ends into even slices helps the seasonings penetrate better into the inner part of the enoki mushrooms.
