Pork 300g
Green onion 20g

Salt 3g

Oyster sauce 10g

Cooking wine 10g
Edible oil 45g
Light soy sauce 5g
Chicken powder 2g
Coriander 6g
Red pepper 5g

Steps:

1.Start by preparing 4 eggs and washing the shells. In a pot, add enough water to cover the eggs. Boil the eggs until cooked through. Set aside.

2.Cut 300g of pork into thin slices and then mince it. The minced pork shouldn’t be too fine, as it affects the texture of the final dish. Cut a section of the white part of a large spring onion into small pieces after splitting it in half. Slice a piece of ginger into thin slices and then cut it into small pieces as well.

3.Season the minced pork. In a bowl, add 2g of salt, 1g of pepper, 5g of oyster sauce, 2g of dark soy sauce for color, and 5g of cooking wine for freshness. Mix the ingredients thoroughly in one direction using your hands for about 2 minutes. Crack an egg into the mixture and beat it in the same direction. This helps tenderize the meat. Add a handful of cornstarch and continue mixing to enhance the binding power of the mixture. The addition of egg and cornstarch helps prevent the meatballs from falling apart.

4.Remove the boiled eggs from the pot and let them cool. Peel the eggs and place them on a plastic wrap-lined cutting board. Spread an even layer of the seasoned minced pork on the plastic wrap. Place the peeled eggs on top of the minced pork and wrap the pork mixture around them, ensuring they are evenly coated. Shape the meatballs into smooth, round balls. Repeat this process for the remaining eggs.

5.Heat vegetable oil in a pan. When the oil reaches about 60% heat and starts to smoke slightly, carefully add the meatballs. It’s best to shape the meatballs again before placing them in the oil to ensure they remain round. Fry the meatballs over low heat while continuously shaking the pan to prevent them from sticking to the bottom. After frying for about 4 minutes and achieving a firm texture, and a golden brown color, remove the meatballs from the oil and drain excess oil.

6.Keep a small amount of oil in the pan. Once heated, add ginger slices and stir-fry until fragrant. Add 5g of oyster sauce and quickly stir-fry to blend. Pour in an appropriate amount of water along the edges of the pan. Start seasoning by adding 5g of cooking wine, 5g of light soy sauce for freshness, 1g of salt, and 2g of chicken powder. Stir well to combine. Once the sauce comes to a boil, add the fried meatballs. Pour in 2g of dark soy sauce to enhance the color and mix well. Continuously pour the sauce over the meatballs, ensuring they are evenly coated. Cover the pan and simmer over high heat for 2 minutes. After 2 minutes, the meatballs should be fully cooked and flavorful.

7.Cut the meatballs in half and arrange them on a plate. Pour the thickened sauce over the meatballs and garnish with some cilantro and shredded red bell pepper. Now you have a delicious and nutritious tiger skin eggs dish ready to be served.

Tips

1.When boiling eggs, soak them in cold water for 10 minutes before heating. This helps prevent the eggshells from cracking easily when boiled.
