Ingredients for Stir-Fried Pork Belly with Napa Cabbage and Glass Noodles

Chinese cabbage 300g
Streaky pork 800g
Sweet potato vermicelli 400g
Edible oil 20g
Dried chilli 12g
Sichuan Pepper 5g
Ginger 5g
Dark soy sauce 4g
Salt 5g
Oyster sauce 6g
Scallion 10g
Sesame oil 8g
Pepper powder 4g

Steps:
1.First, prepare a bowl of napa cabbage leaves. These are the leaves of the napa cabbage. Slice the pork belly into pieces. Also, use sweet potato glass noodles. When soaking the glass noodles, try to use warm water instead of boiling water. Cut the dried chili peppers into segments. Shred the ginger.

2.In a clean pan, add a small amount of cooking oil. Start by adding the pork belly to the pan and stir-fry until fragrant and the fat is rendered. Then add the dried chili peppers and a few Sichuan peppercorns. Add the shredded ginger and a little dark soy sauce for coloring. Stir-fry until fragrant.

3.After the aroma is released, add the napa cabbage leaves and stir-fry evenly. Once the cabbage has softened, add a spoonful of salt and some oyster sauce.

4.Finally, add the glass noodles to the pan and stir-fry them. Once the noodles are cooked, reduce the heat. Add scallion segments, a drizzle of sesame oil, a sprinkle of pepper, and stir-fry until well combined. Now, it’s ready to be served in a bowl.

Tips:
1.Pay attention to the order when adding glass noodles and napa cabbage to the pan. Add the glass noodles first, then the napa cabbage leaves. This allows the glass noodles to fully absorb the flavorful juices released by the cabbage, resulting in a more delicious and fragrant taste. It also helps to soften the cabbage during stir-frying.
2.Stir-fry the glass noodles in the pan until they become translucent in color. There is no need to cook them for too long.
3.When stir-frying the pork belly, ensure that the oil temperature is not too high and the heat is not too intense to prevent the pork belly from burning.
