Pig skin 300g
Green onion 10g
Ginger 10g
Cooking wine 20g
Thread Pepper 20g
Small chili pepper 7g
Garlic 7g
Dried chilli 8g
Green pricklyash 5g
Chili paste 5g
Light soy sauce 10g
Salt 2g
Sugar 3g
Chicken powder 2g

Steps:

1.First, let’s prepare the ingredients. Wash 300g of pig skin. Cut a section of spring onion into horseshoe-shaped slices, and slice a piece of ginger into ginger slices.

2.Next, blanch the pig skin in boiling water. Bring water to a boil in a pot, add 10g of cooking wine to remove any unpleasant odor, and slowly cook out impurities from the pig skin. Once the water is boiling, skim off any foam and add the sliced ginger and spring onion. Cover the pot and cook for 3 minutes. The purpose of this step is to soften the pig skin and facilitate the removal of any remaining pig hair.

3.After 3 minutes, remove the pig skin from the pot and rinse it thoroughly with clean water. Use a disposable razor blade to scrape off any remaining impurities and pig hair from the surface of the pig skin.

7.Heat oil in the pan. Once hot, add a pinch of Sichuan peppercorns to release its fragrance. Add the prepared seasonings and stir-fry until aromatic, being careful not to overheat the oil to avoid burning the chili peppers. Add 5g of chili bean sauce and stir to dissolve, creating a red oil.

8.Pour in the blanched pig skin with excess water drained off, and quickly stir-fry to coat the pig skin. Drizzle 5g of cooking wine from the side of the pan and stir-fry evenly. Add 10g of light soy sauce. Continue stir-frying to let the pig skin absorb the flavors. Add the sliced bell peppers and stir-fry until slightly softened. Season with 2g of salt, a small amount of sugar for freshness, and 2g of chicken bouillon powder. Increase the heat to high, stir-fry to fully incorporate the seasonings into the ingredients. Once well mixed, transfer to a plate and serve.
