Red pepper 15g
Smoked bean curd 100g

Dried chilli 6g
Green onion 4g
Garlic 3g
Salt 3g
Chicken powder 3g
Pepper powder 2g
Sesame oil 5g
Sichuan Pepper 4g
Soy sauce 3g
Sugar 3g

Steps:

1.First, prepare the ingredients. Wash a bunch of chives and cut them into approximately 3cm sections. Half a deseeded red bell pepper can be thinly sliced and combined with the chives. This will enhance the dish’s color and appeal. Slice the dried tofu into square pieces and then into thin strips. Cut scallions diagonally into half-moon slices, ginger into diamond-shaped slices, garlic into thin slices, and add a handful of dried red chili peppers.

2.Boil water in a pot and add the dried tofu. Blanch for 10 seconds, then remove and drain. This step removes any beany flavor from the dried tofu and gives it a fresher texture.

3.Heat an adequate amount of cooking oil in a pan. Once hot, add the scallions, ginger, garlic, Sichuan peppercorns, and dried red chili peppers. Sauté over medium-low heat until fragrant. Then add the chopped chives and red bell pepper strips, and stir-fry over high heat. When they are almost cooked, add the dried tofu strips.Remove the pan from the heat and add a suitable amount of salt, a small quantity of soy sauce, chicken bouillon, and white pepper powder. Return the pan to high heat and continue stir-frying to evenly distribute the seasonings among the ingredients. If it appears slightly dry, you can add a small amount of water to prevent burning. Avoid adding salt too early to prevent excessive moisture from the chives.After a few quick stirs, add an appropriate amount of sesame oil and stir well before removing it from the heat. Transfer to a serving dish.
