Recipe for Braised Pork Ribs with Rice

Tasting braised pork ribs with rice is an ultimate indulgence. With each big bite, you first experience the tender and juicy pork ribs, followed by the fragrant and delicious rice. Ingredients for pork rib rice

Pork ribs 500g
Ginger 10g
Carrot one
Onion one
Rice 300g
Cooking wine 10g
Salt 2g
Chicken powder 1g
Pepper powder 1g
Oyster sauce 5g

Steps:

1.Firstly, prepare the ingredients. Take 500 grams of pork ribs and chop them into even small pieces. Slice a piece of ginger thinly and add it to the pork ribs to remove any unpleasant smell. Peel and slice a carrot into thick slices, then cut them into strips. Cut off both ends of an onion, peel it, and slice it into thin strips. Rinse a bowl of regular rice with water and drain it.

2.Next, blanch the pork ribs. Add enough water to a pot, then add the pork ribs, 5 grams of cooking wine, and a few slices of ginger. Bring it to a boil over high heat to remove any blood from the ribs. Skim off the foam that rises to the top. Remove the ribs from the pot and rinse them with clean water.

3.Heat oil in a pan. Once hot, stir-fry a portion of the onion until it becomes dry and fragrant, then remove it from the pan. This step aims to enhance the natural aroma of the dish. Add the sliced carrots and the remaining onion to the pan and stir-fry for a minute. Once the carrots are slightly cooked, add the drained pork ribs and stir-fry until well mixed. Add 3 grams of salt to season the ingredients. Continue stir-frying, then pour in an appropriate amount of water from the side of the pan and start seasoning. Add 5 grams of cooking wine, 1 gram of chicken powder, 1 gram of pepper powder, and 5 grams of oyster sauce. Stir-fry until well mixed, then cover the pan and simmer for 15 minutes. You can simmer it a bit longer to fully extract the red juice from the carrots for better color. After 15 minutes, the pork ribs should be cooked and well-flavored, and the red juice from the carrots should be extracted.

4.Pour the rinsed rice into the bottom of an electric rice cooker, leaving a portion for later. Transfer the pork ribs and carrots into the rice cooker and mix well. Pour the remaining rice on top and flatten it. Then, pour the cooked pork rib broth into the rice cooker. Cook the rice on the high-pressure mode until it is fully cooked. Finally, transfer the cooked rice and pork ribs to a serving plate, and it is ready to be enjoyed.

Tips

1.After rinsing the rice, soak it in water for half an hour. This will make the rice more soft and sticky.
2.Boil the pork ribs in hot water first to remove any impurities. Skim off the foam and then rinse the ribs with warm water to clean them thoroughly. Drain the excess water. When stir-frying the ribs, you can add some rock sugar and stir-fry until it caramelizes to give the ribs a nice color.
3.Spread the soaked rice on top of the cooked dish, then add enough hot water to just cover the rice. Be careful not to add too much water, as it can make the rice too sticky.
