Steps :
1.First, prepare the ingredients. Crack two eggs into separate small bowls, separating the egg whites and yolks.
2.Take a handful of roasted peanuts and finely crush them using a mortar and pestle. Once crushed, set aside.
3.In a larger bowl or small bucket, add 50g of peanut oil, 45g of butter, and 10g of granulated sugar. Add the two egg yolks. Use a whisk to beat the egg yolks, sugar, and butter until well combined and creamy.
4.Add 70g of low-gluten flour and a small amount of condensed milk. Using a spoon, fold the mixture from the bottom up, avoiding stirring in one direction. Stir until well combined, then add the crushed peanuts and continue mixing.
5.Gradually add more low-gluten flour and knead until a dough is formed. Take out a baking tray from the electric oven, line it with aluminum foil. Take a small piece of dough, approximately 30g, and roll it into a ball shape in your palms. Gently press down on the center of the ball to flatten it slightly. Arrange the dough balls on the tray, placing half a peanut on top of each one. Lightly press down on the tops.
6.Once arranged, place the tray in the oven. For my smaller oven, I bake at 170°C for about 20 minutes. Adjust the temperature and time according to your own oven. Keep an eye on the peanut brittle during baking to avoid overcooking or burning.
7.After 20 minutes, remove the peanut brittle from the oven. Transfer them to a plate and break one open to see the layers of crushed peanuts embedded inside the cookie. You now have a large plate of golden, crispy, and crunchy peanut brittle ready to enjoy.
