During the stir-frying process, the noodles absorb the fragrant essence of various ingredients, resulting in a diverse and satisfying texture. Combined with ingredients such as spring onions, eggs, and bean sprouts, stir-fried noodles become a nutritious and flavorful delicacy. It not only fills the stomach but also warms the heart, becoming a cherished culinary memory for many.
Ingredients for Old-fashioned stir-fried noodles:
Noodles | 200g |
Celery | 100g |
Green onion | 6g |
Ginger | 4g |
Oyster sauce | 5g |
Dark soy sauce | 5g |
Salt | 3g |
Chicken powder | 1g |
Soybean sprouts | 50g |
Streaky pork | 30g |
Pepper powder | 1g |
Step:
1.First, gather fresh ingredients to prepare this dish. Take a bunch of celery and remove the root, then pluck off the leaves. Thoroughly wash the celery to ensure there are no impurities. Next, cut the cleaned celery into small 3-centimeter segments for later use. Apart from celery, we also need to prepare a handful of mung bean sprouts. Similarly, wash the bean sprouts and drain them for later use. The selection of these ingredients makes this dish both healthy and delicious. Celery is rich in vitamins and fiber, promoting digestion and boosting immunity. Mung bean sprouts are packed with protein and vitamin C, benefiting skin health and enhancing the body’s resistance.
2.Slice the white part of a large spring onion and finely slice the ginger, then further cut it into diamond-shaped slices. Set aside the sliced spring onion and ginger together. These seasonings will add unique aroma and flavor to the dish. Spring onion has a strong flavor that enhances the texture and fragrance of the dish. Ginger, on the other hand, adds a spicy kick and elevates the flavor profile of the dish.
3.Additionally, we need to prepare a piece of streaky pork and thinly slice it for later use. Streaky pork is a fatty cut of pork that offers a rich and varied texture. In this dish, the addition of streaky pork will enhance the flavor and texture, making the whole dish more delicious and appetizing.
4.Prepare 200 grams of fresh noodles and place them in a plate. Fresh noodles are a common type of pasta that can be purchased at supermarkets or vegetable stores. You can choose your preferred brand or texture, such as thin noodles, wide noodles, or other types of noodles. If you prefer a healthier option, you can also consider choosing whole wheat or high-fiber noodles.
5.Once the ingredients are ready, we start stir-frying the noodles. Heat oil in a pan, swirl it around, and then pour out the hot oil. Add some cool oil to the pan and evenly spread the noodles along the edge of the pan. Make sure the thickness of the noodles is even. Keep shaking the pan while heating it over low heat, making sure the center of the bottom doesn’t get too hot. Rotate the pan to heat the edges and ensure even heating of the noodles, preventing them from sticking to the pan. Once one side turns golden, flip it over and fry the other side. Fry the noodles until both sides are golden brown, then remove and drain the excess oil.
6.Now let’s stir-fry the vegetables. Heat oil in the pan again, and once hot, add the sliced pork and quickly stir-fry until fragrant. Then add the spring onion and ginger and stir-fry to release their fragrance. Add 5 grams of oyster sauce and stir-fry evenly, followed by 3 grams of dark soy sauce to enhance the color. After adjusting the color, add the celery and mung bean sprouts, quickly tossing and stirring to evenly cook. Next, it’s time to season the dish. Add 3 grams of salt, 1 gram of chicken powder, and 1 gram of black pepper powder, and continue stir-frying to mix the seasonings well.
7.Stir-fry the celery and bean sprouts until they are partially cooked. Pour some water from the side of the pan to give them a deeper color. If the color is not dark enough, add some more dark soy sauce. Increase the heat and bring the broth to a boil. Add the fried noodles into the pan and then pour the broth over the noodles. Cover the pan and let it simmer for 5 minutes. During this time, shake the pan continuously to evenly distribute the heat and allow the steam to cook any remaining uncooked noodles.
8.After 5 minutes of simmering, the noodles have absorbed the broth completely and become well-flavored. At this point, gently separate the noodles with chopsticks to evenly distribute them. Then, quickly stir-fry the noodles to ensure they are thoroughly mixed with the other ingredients and evenly heated. This will enhance the texture and aroma of the dish. Once the noodles are well-cooked through stir-frying, remove the dish from the pan and serve on a plate.
Tips:
1.Different types of noodles have different textures and cooking times. Common varieties include wide noodles, thin noodles, and Italian pasta. Choose the type of noodles that suits your preferred texture and complements the characteristics of the dish.
2.Stir-frying noodles is a quick cooking process, so make sure to wash and prepare all the vegetables and seasonings beforehand. This ensures that you can smoothly proceed with the stir-frying.
