Sesame oil 5g
Salt 3g
Essence of chicken 4g
Sugar 4g
Thread Pepper 35g
Small chili pepper 30g
Coriander 23g

Steps:

1.Cut the chicken feet into small pieces. Place them in a pot with cold water, ginger slices, and cooking wine. Bring it to a boil over high heat and cook for about 5 minutes to blanch and remove any blood or impurities. Once blanched, remove the chicken feet from the pot and rinse them with cold water to prevent sticking.

2.Prepare a bowl and add three tablespoons of soy sauce, two tablespoons of vinegar, one tablespoon of oyster sauce, and one tablespoon of sesame oil. Then, add a suitable amount of salt and chicken bouillon, and finally, a small amount of sugar for added flavor. Stir well to mix all the ingredients evenly and set aside.

3.In a larger bowl or container, pour the blanched chicken feet soaked in cold water. Then, pour in the prepared seasoning mixture. Next, prepare some small green peppers and dried chili peppers, wash them, and cut them into small pieces. Add them to the chicken feet along with chopped cilantro and a sliced, deseeded lemon. Mix thoroughly with both hands, ensuring that all the ingredients are well combined.

4.Mix well and marinate for one hour. Place the mixed chicken feet in the refrigerator for an additional hour, allowing the flavors to fully penetrate the meat and enhance the taste. If time permits, the marinating time can be extended to two hours or longer for even better flavor and texture.

Tips

1.Choose fresh chicken feet and lemons. Sliced deseeded lemons can be directly added to the chicken feet to enhance the fragrance of lemon.
2.If you prefer a stronger sour taste, you can increase the amount of vinegar and soy sauce in the seasoning mixture. If you prefer a spicier flavor, you can increase the amount of dried chili peppers in the seasoning mixture.
3.Place the chicken feet in a sealable container, add the prepared sauce, and mix well. Refrigerate for at least 2 hours, stirring occasionally to ensure the chicken feet are evenly marinated.
4.Once marinated, remove the chicken feet from the container and sprinkle with some white sesame seeds and chopped green onions before serving.
