Ingredients for mapo tofu

Silken tofu 400g
Minced beef 100g
Bean paste 30g
Cooking wine 10g
Soy sauce 10g
Chopped ginger 2g
Chopped green onion 2g
Minced garlic 2g
Fermented blank bean 5g
Chili powder 5g
Sugar 5g
Sichuan Pepper 2g
Garlic sprout 1 Stalk
Salt 2g

 

Steps:

1、Prepare the necessary ingredients.

2、Cut the tofu into small cubes, chop the Pixian Doubanjiang and fermented black beans with a knife.

3、Toast the Sichuan peppercorns over low heat until they turn brownish-red.

4、Let the toasted Sichuan peppercorns cool down, then crush them using a rolling pin or mortar and pestle.

5、Pour water into a pot, add a pinch of salt, bring it to a boil, and then add the tofu. Reduce the heat and simmer for 2 minutes. Remove the tofu from the pot and drain the water.

6、Heat a clean pan, add oil, and stir-fry the ground beef over low heat until it becomes dry and crispy, and releases oil.

7、Add the chopped Pixian Doubanjiang, fermented black beans, Sichuan peppercorn powder, and chili powder to the pan. Stir-fry over low heat until fragrant and the oil turns red. Add chopped green onions, ginger, and garlic.

8、Add Huangjiu (yellow rice wine) and soy sauce. Stir-fry over high heat until fragrant.

9、Add some hot water, sugar, and salt. Bring it to a boil.

10、Gently place the tofu into the pot. Increase the heat to high and bring it to a boil, then reduce the heat to low and simmer for 5 minutes.

11、Once the sauce thickens, thicken it further if desired. Sprinkle with minced garlic greens and some Sichuan peppercorn powder after turning off the heat.

Tip

1、Choose tender tofu instead of firm tofu.

2、If you prefer a stronger numbing and spicy flavor, feel free to add more Sichuan peppercorns and chili.
