How to stir-fry yam with black fungus

Published Categorized as Homemade dishes

Stir-fried Yam with Black Fungus showcases appealing shades of vibrant green and pale yellow, emitting a subtle fragrance. Upon tasting, the yam reveals a tender and refreshing texture, while the black fungus is soft and elastic, resulting in a delightful mouthfeel. This dish not only pleases the taste buds but also holds abundant nutritional value. The starch enzyme in yam enhances carbohydrate digestion, promoting efficient absorption by the spleen and stomach. On the other hand, black fungus contains iron and fiber, which aid in blood nourishment, skincare, and colon cleansing. Consuming both together not only nourishes the body but also enhances beauty and appearance.

Ingredients for Stir-fried Yam with Wood Ear Mushrooms

Yam 300g
Green pepper 20g
Garlic 8g
Small chili pepper 5g
Wood ear fungus 40g
Edible oil 10g
Sugar 3g
Salt 3g
Chicken powder 2g
Starch 3g
Sesame oil 4g

Steps:

1.Today, I’m going to share a recipe for Stir-fried Yam with Wood Ear Mushrooms. This is a very light and common vegetarian dish. First, let’s prepare the ingredients. Peel and cut a section of yam into long strips. Place them in a bowl and soak in water to prevent discoloration.

2.Cut a green bell pepper into evenly-sized cubes. Slice a few cloves of garlic. Cut two small chili peppers in half. Next, prepare some soaked wood ear mushrooms and set aside. Now, blanch the ingredients in boiling water.

3.Bring water to a boil in a pot and add a little cooking oil. The oil will prevent the ingredients from changing color and losing nutrients. Once the water boils, add the sliced yam to the pot and blanch for 1 minute. Then add the wood ear mushrooms and green bell pepper, and continue blanching for 30 seconds. Once all the ingredients are partially cooked, remove them from the pot and rinse with clean water to cool them down.

4.Heat some oil in a pan. Once the oil is hot, add the sliced garlic and stir-fry until fragrant. Add the halved chili peppers and stir-fry for a while. Add the blanched and drained ingredients and stir-fry briefly before seasoning.

5.Add 2 grams of salt, a little sugar, and 1 gram of chicken powder. Stir-fry over high heat until the seasonings dissolve. Drizzle a small amount of water starch mixture to help the seasonings adhere better to the ingredients. Finally, add a small amount of sesame oil for a glossy appearance. Stir-fry evenly and then transfer the dish to a plate.

Tips

1.Choose fresh yam and wood ear mushrooms: Select fresh yam with smooth and wrinkle-free skin, without any soft spots or black patches. For wood ear mushrooms, choose dried ones with bright color and tender texture, or fresh wood ear mushrooms.
2.Soak the wood ear mushrooms thoroughly: If using dried wood ear mushrooms, soak them in warm water for about 10-15 minutes until they become completely soft. Then, rinse and cut them into appropriate-sized pieces.
3.Stir-fry quickly to maintain the texture of yam: When stir-frying yam, it is important to cook it quickly to retain its firm texture. Sliced yam can be soaked briefly in lightly salted water in advance, then drained, to help preserve its texture and color.
4.Peel yam with a gentle scraping motion: When handling yam, you can gently scrape off the skin using the back of a knife. This can save time and retain the nutrients of the yam. Be careful not to scrape too deeply to avoid wasting the yam.

Stir-fried Yam with Wood Ear Mushrooms is a delicious home-cooked dish that combines the nutritional advantages of yam and wood ear mushrooms. It cleverly blends their flavors, retaining the authentic taste of the ingredients while adding rich nutritional value. Whether served as a main course or a side dish, it is a nutritious and flavorful delicacy. Let’s enjoy the process of making this dish and indulge in the culinary feast brought by healthy and delicious food.
