Ingredients for scrambled eggs with green pepper

Green pepper three
Egg four
Scallion 3g
Garlic 4g
Ginger 8g
Salt 3g
Pepper powder 2g
Sugar 3g
Essence of chicken 2g
Edible oil 5g

Steps:
1.Prepare 3 green peppers, wash them thoroughly, and cut them into strips. Set aside on a plate.

2.Chop the white part of spring onions and the green part separately. Finely chop some garlic and ginger. Set them aside on separate plates.

3.Crack 4 eggs into a bowl. Add a pinch of salt for seasoning, a little pepper to remove any odor, and a small amount of white vinegar for fragrance. Mix well.

4.Heat a pan and add a small amount of cooking oil. Once the oil is hot, pour in the beaten eggs and stir-fry until scrambled. Transfer to a plate.

5.Add another small amount of cooking oil to the pan and stir-fry the chopped spring onions, ginger, and garlic until fragrant.

6.After the aromatics are fragrant, add the green peppers and stir-fry until they release their spiciness. Stir-fry until the peppers have reduced their moisture, as this enhances the flavor. After about 1 minute, add the scrambled eggs and toss them together. Then, start seasoning by adding a pinch of salt and an appropriate amount of chicken essence. Stir-fry over high heat for 30 seconds.

7.Just before removing from the heat, sprinkle some chopped green onions over the dish and stir-fry everything evenly. Transfer to a plate and serve. Enjoy!

Tips
1.Choose screw peppers with thick flesh and a strong spiciness.
2.The ratio of eggs to green peppers can be adjusted according to personal taste. Adding more green peppers will enhance the flavor.
3.Season the beaten eggs with a little salt and chicken essence to enhance their flavor.
4.When stir-frying the eggs, use low heat to gently cook them. Flip them over after the bottom has solidified. This will ensure even heat distribution, resulting in a tender and juicy texture.

Stir-fried green peppers with eggs not only fulfills our desire for good food but also awakens our longing for a warm family. It is a sensory pleasure and the taste of home. Let’s indulge in this delicious delicacy together, experiencing the warmth and happiness of home.
