How to make stir-fried shrimp meat

Ingredients for fried shrimp meat

Freshwater shrimp 500g
Salt 2g
Pepper powder 2g
Cooking wine 5g
Egg one
Starch 5g
Asparagus 300g
Red pepper 23g

Green onion 8g
Edible oil 12g
Sugar 5g

Steps:

1.Firstly, wash the green prawns, remove the heads, peel off the shells, and extract the shrimp meat. Then, place the shrimp meat on a cutting board, make a shallow cut along the back of each shrimp, being careful not to cut through completely. Next, rinse the shrimp meat thoroughly in clean water to remove the dark vein. Finally, remove the shrimp meat from the water and pat it dry using a clean towel.

2.In a bowl, add an appropriate amount of salt and ground black pepper, and mix them well. Then, add a moderate amount of cooking wine. Afterward, add an egg white and stir until well combined. Toss the shrimp meat in this mixture, ensuring that the seasoning coats the shrimp thoroughly. Next, add a spoonful of cornstarch and continue stirring to help the starch lock in the moisture within the shrimp meat.

3.Take a small bunch of asparagus and wash it before cutting it into uniformly sized pieces using a rolling cut technique. Wash a red bell pepper and slice it into diamond-shaped pieces for visual appeal. Slice some ginger, and cut the white part of the spring onion into horse-hoof-shaped slices for later use.

4.Once the ingredients are ready, blanch the asparagus. In a pot, add an appropriate amount of water along with a pinch of salt and cooking oil. Once the water comes to a boil, add the prepared asparagus and red bell pepper pieces. Blanch them for 20 seconds until the asparagus turns tender-crisp. Then, drain and rinse them under cold water to cool down. This step enhances the crispness of the asparagus.

5.In the same pot, boil water and add a little salt and cooking oil. Once the water boils, add the marinated shrimp meat one by one. Blanch them quickly for 30 seconds until the shrimp turns slightly pink and curls. Then, rinse them with clean water and set aside.
6.Heat oil in a pan. Once the oil is hot, add the spring onion and ginger to release their fragrance. Add the blanched asparagus and shrimp meat with excess water drained. Stir-fry evenly in the pan. Pour a little water along the edge of the pan. Then, season with one gram of salt, a small amount of sugar, and one gram of pepper. Stir-fry on high heat for the ingredients to absorb the flavors. Pour in a little water starch, add a splash of soy sauce to enhance the color, and stir well before removing from the heat. Serve the dish on a plate.

Tips

1.When blanching the asparagus, adding cooking oil and salt to the boiling water helps enhance its flavor and gives it a vibrant color.
2.Handling the shrimp. Marinate the shrimp with a pinch of salt and some cooking wine for 10 minutes to remove any unpleasant odor.
3.Control the cooking time. When stir-frying the shrimp, avoid using high heat and opt for medium to low heat instead. This will prevent overcooking and charring of the shrimp.
