How to make crispy fried pork chops

Ingredients for crispy fried pork chops

Pork fillet 300g
Salt 6g
Black pepper powder 10g
low-gluten flour 8g
Egg one
Soy sauce 3g
Sugar 5g
Rice wine 3g

Steps:

1.Cut the pork tenderloin in half lengthwise, then gently pound it with the back of a knife to make the meat more tender. This helps prevent shrinkage during frying. Make a few cuts on the meat surface to enhance the texture and flavor absorption. Sprinkle salt and black pepper evenly on one side of the meat. Be careful not to use too much, as it may overpower the natural deliciousness of the pork chop. Sprinkle some all-purpose flour and gently massage it to allow the pork chop to fully absorb it. The flour creates a crispy outer shell during frying. Repeat the same steps on the other side, sprinkling with salt, black pepper, and flour. Then flip the meat and massage it again, marinating for 5-10 minutes.

2.Prepare a large bowl and beat the eggs into an egg wash. Soak the marinated pork chops in the egg wash, ensuring they are fully immersed.

3.Take a large baking dish and pour breadcrumbs into it. Remove the pork chops from the egg wash and place them on top of the breadcrumbs. Gently press down to ensure even coverage of breadcrumbs on the pork chops.

4.Heat oil in a pan until medium-hot. Place the breaded pork chops into the pan for frying. Fry one side until golden brown, then flip them over to fry the other side. Avoid flipping the pork chops frequently to maintain their shape and texture. Once both sides are golden brown, remove the pork chops from the pan and set them aside.

5.In another small bowl, combine white sugar and cook it over low heat. When the sugar starts to melt and change color, add soy sauce and rice wine, followed by an appropriate amount of water. Heat the mixture until it starts bubbling, then add miso paste and stir well before turning off the heat. Be careful not to cook it for too long, as it may lose its natural deliciousness. Pour the prepared sauce evenly over the fried pork chops. If you prefer a spicy taste, you can add some chili oil or dried chili flakes at this stage.
