Ingredients for Hot Pot Base Cake

Egg three
Sugar 70g
Low-gluten flour 20g
Butter 100g
Milk 70g
Sichuan Pepper 3g

Steps:

1.Beat the egg whites in a clean bowl with an electric mixer on low speed until bubbles form. Then add a small amount of granulated sugar and continue beating until the egg whites become thick. Add more granulated sugar gradually and beat until the egg whites develop a glossy texture and ribbons. Finally, add the remaining granulated sugar and beat until the egg whites form stiff peaks.

2.Place the egg yolks in another bowl and beat with an electric mixer on low speed until they become thick. Sift in cake flour and cocoa powder, and continue beating until well combined.

3.Add the whipped egg whites to the yolk mixture in two portions, adding a small amount each time, and gently fold with a spatula until well mixed.

4.Pour the combined batter into a prepared mold. Gently tap the mold a few times to release any air bubbles.

5.Place the mold in a preheated oven, on the middle-lower rack, at 140 degrees Celsius, and bake for 60 minutes. Baking time may vary depending on the oven model and mold size, so adjust accordingly.

6.Remove the baked cake from the oven and let it cool on a cooling rack. Once the cake has cooled completely, remove it from the mold and place it on a cutting board. Cut the cake into different shapes like circles, squares, or hearts, according to your preference.

7.Beat 100g of butter and 30g of granulated sugar with an electric mixer on low speed until the butter becomes fluffy and lighter in color. Gradually add 70g of milk, a small amount at a time, and continue beating until the cream sauce is smooth and not too thick.

8.Add a suitable amount of orange and red food coloring to achieve the color of a hot pot base. Transfer the prepared cream sauce into a piping bag suitable for decorating and pipe beautiful patterns of the hot pot base on the surface of the cake. Design different patterns as desired.

9.Sprinkle some Sichuan peppercorns, chili flakes, and cilantro or other decorative ingredients on the cake to enhance texture and visual appeal.

1.To make the cake layer of the hot pot base cake softer and more flavorful, you can add some milk or yogurt to the cake ingredients. This will increase the moistness and texture of the cake.
