The ingredients for the Homestyle Stir-fried Meat

Streaky pork 300g
Bell pepper 10g
Chili pepper 10g
Garlic 10g
Oyster sauce 3ml
Dark soy sauce 5ml
Salt 3g

Steps:

1.Preparation of the pork belly: Choose fresh pork belly and soak it in clean water for a few minutes to remove any surface impurities. Rinse the cleaned pork belly with clean water. Place the cleaned pork belly on a cutting board and use a sharp knife to slice it into thin slices. To ensure even cooking, it is recommended to control the thickness to about 2 millimeters. Select pointed peppers and red bell peppers with a complete appearance and vibrant color. Rinse them with clean water and pat them dry with kitchen paper towels. Place the pointed peppers and red bell peppers on a cutting board, trim the top and bottom to make them even. Then, cut them into approximately 2-centimeter-sized pieces. You can adjust the size of the pieces according to personal preference. Choose fresh garlic cloves, gently peel off the outer skin by hand. Rinse the peeled garlic cloves with clean water. Place the cleaned garlic cloves on a cutting board and use the back of a knife to crush them slightly to make them loose. Then, use the tip of the knife to finely mince them.

2.Place the sliced pork belly into a suitable container, ensuring that it can fully cover the pork slices. Take an adequate amount of light soy sauce, adjust the quantity based on personal taste and desired color. Pour the light soy sauce evenly into the container, ensuring it thoroughly coats the pork slices. Take an appropriate amount of dark soy sauce, which has a deeper color and richer flavor, to enhance the aroma and tenderness of the pork belly. Adjust the quantity according to personal preference and desired color. Pour the dark soy sauce evenly into the container, mixing it well with the light soy sauce. Use chopsticks or kitchen utensils to gently toss the pork belly, ensuring every slice is evenly coated with the marinade. Then, seal the container and let the pork belly marinate at room temperature for five minutes to enhance the flavor.

3.Take a flat-bottomed pan and add an adequate amount of cooking oil. Adjust the heat to medium-high and wait for the oil to heat up. Once the oil is hot, place the marinated pork belly into the pan. Stir-fry quickly with a spatula or kitchen utensil until the pork belly starts to release oil and turns slightly golden. Add the minced garlic into the pan and continue stir-frying. The fragrance of garlic will gradually be released, enriching the flavor of the dish. Pour the diced green and red bell peppers into the pan together and continue stir-frying. The aroma and vibrant colors of the peppers will gradually become evident during the cooking process. Keep stirring until the green and red bell peppers soften and begin to curl. This indicates that the peppers are cooked and have a more delightful taste. Add an appropriate amount of salt according to personal taste preferences, gently mix it in. Please note that if salt was already added during the marination of the pork belly, you may need to reduce the amount of salt used. Continue stirring evenly to ensure all ingredients are thoroughly mixed. Then, transfer the well-stir-fried dish onto a plate and it is ready to be enjoyed.

Tips:

1.After removing the seeds from the chili peppers, you can lightly score them with a knife. This method helps reduce the spiciness. However, if you prefer a spicier taste, you can skip removing the seeds.

2.High-temperature stir-frying: Pour an adequate amount of oil into a hot wok or pan. Once the oil is hot, add the marinated meat slices and quickly stir-fry them. Stir-frying at high temperatures for a short time helps to maintain the tenderness and texture of the meat.
