Grilled fish is a mouthwatering homestyle delicacy. When the grilled fish is brought out of the oven, the entire room is filled with a tantalizing aroma of spices mixed with lemon, herbs, and the smoky scent of grilled meat. Ingredients for Grilled Fish :

Carp 600g
Onion 100g
Bean Sprouts 50g
Coriander 6g
Chopped green onion 5g
Green onion 5g
Ginger 5g
Scallion 6g
Garlic 5g
Salt 3g
Sugar 5g
Cooking wine 20g
Sichuan Pepper 5g
Light soy sauce 20g
Essence of chicken 1g
Chili paste 5g
Dried chilli 10g
Pepper powder 2g

 

Step:

1.First, let’s prepare the ingredients. We’ll need one scaled carp fish. Cut the fish along its back, which makes it easier for the meat to cook. Remove the innards and wash off any blood from the fish. Then, gently make a few cuts on both sides of the fish to allow it to absorb flavors.

2.Next, place the fish in a bowl for marinating. Add 2 grams of salt, a bit of sugar, 2 grams of black pepper powder, 10 grams of cooking wine to remove any fishy smell, a few Sichuan peppercorns, a small handful of dried chili peppers, squeeze the juice from one small green onion, and slice a piece of ginger. Apply this marinade to the fish and let it marinate for 10 minutes.

3.Slice half an onion, add a small handful of bean sprouts into a bowl. Cut one long green onion into long segments, slice a piece of ginger, mince a few garlic cloves, and cut some small chili peppers into rings. Set aside.

4.Now, let’s start cooking. Heat the wok with oil, then pour out the hot oil. Add some cold oil, and place the marinated fish into the wok. Once the fish is in the wok, don’t flip it. Keep shaking the wok to evenly heat the fish. As the fish heats up, the edges will slowly curl up. Flip the fish when one side is golden brown, and fry the other side until both sides are golden brown. Flip the fish again and drain the excess oil.

5.Leave a little bit of oil in the wok. Once the oil is hot, add a small handful of dried chili peppers to infuse fragrance. Season the vegetables with 1 gram of salt. Stir-fry quickly over high heat, ensuring all the ingredients are evenly mixed. Remove from heat and place the stir-fried vegetables at the bottom of a baking dish.

6.Heat oil in the wok again. Once the oil is hot, add a few Sichuan peppercorns and a small handful of dried chili peppers. Pour in the prepared seasonings and stir-fry until fragrant. Add 5 grams of chili sauce and stir until it turns red and releases oil. Pour in an appropriate amount of water from the side of the wok to start seasoning. Add 20 grams of light soy sauce, 10 grams of cooking wine to remove any fishy smell, 3 grams of dark soy sauce for color, 1 gram of salt, a little sugar, and 1 gram of chicken bouillon.

7.Bring the sauce to a boil over high heat. Then, pour the sauce over the fried carp fish in the wok. Allow the fish to cook in the sauce for 2 minutes, allowing the flavors to penetrate the fish. After 2 minutes, remove the fish from the heat and transfer it along with the sauce to the baking dish. Sprinkle some cumin powder and white sesame seeds on top.

8.In another pan, heat oil until hot. Add a small handful of Sichuan peppercorns and a handful of dried chili peppers. Stir-fry the chili peppers until fragrant, then remove from heat. While the oil is still hot, pour it over the fish. Finally, garnish with cilantro and chopped green onions. Now you can enjoy your meal.

Tips:

1.Choose fresh fish, preferably a whole fish or fish fillets, to ensure delicious and tender texture.

2.Grease the baking dish with oil to prevent the fish from sticking and to make it easier to remove. Alternatively, you can line the baking dish with aluminum foil for easy cleaning.
