Enoki mushrooms, also known as “golden needle mushrooms” or “enokitake,” are highly popular due to their unique texture and nutritional value. Ingredients for Flavored Enoki Mushrooms:

Enoki Mushrooms 300g
Tomato 200g
Garlic 5g
Ginger 5g
Green pepper 10g
Green onion 6g
Pork 50g
Chicken powder 1g
Light soy sauce 10g
Dark soy sauce 2g
Pepper powder 1g
Chopped pepper 10g

Step:

1.First, let’s prepare the enoki mushrooms. Enoki mushrooms are a common edible fungus with slender stems and golden caps. They are rich in protein, vitamins, and minerals, making them highly nutritious. Before we begin, we need to trim off the root portion of the enoki mushrooms to remove any tough or dirty parts. Next, place the trimmed enoki mushrooms in a bowl and wash them. The purpose of washing is to remove impurities and any remaining dirt on the surface. Gently rinse the enoki mushrooms with running water, being careful not to overly rub or damage the structure of the mushrooms. Once the enoki mushrooms are clean, you can use your hands or a strainer to remove them from the water. After removing the enoki mushrooms, it’s important to squeeze out excess moisture. Enoki mushrooms contain a lot of water, and too much moisture can affect the texture and cooking results of the dish. Therefore, gently press the enoki mushrooms with a cloth or paper towel to remove as much excess moisture as possible.

2.Now, let’s prepare a fresh tomato. Use a knife to make a cross-shaped cut on the top of the tomato. This will make it easier to peel later on. Next, place the tomato in a bowl and pour boiling water over it, allowing it to blanch for a while in the hot water. This step helps to remove the tomato’s skin, making it easier to peel. Once the tomato has softened slightly, use a sieve or tongs to remove them from the hot water and set them aside to cool. Once fully cooled, the tomato’s skin can be easily peeled off. This prepped tomato will be easier to peel and will retain its vibrant color. After peeling the tomato, dice it into small pieces for convenience in subsequent steps. Place the diced tomato in a bowl and set it aside for the next cooking or seasoning step.

3.Garlic and ginger are commonly used seasonings in cooking, adding unique aroma and flavor to dishes. Before using them, we usually process them into minced garlic and ginger. First, take an appropriate amount of garlic, which can be determined based on personal preference. Place the garlic head on a cutting board and gently tap it with the flat side of a knife to loosen it. Then, use the back or tip of the knife to flatten the garlic head, making it easier to peel off the skin. Once peeled, place the garlic on the cutting board and cut it into small pieces. Then, gather the garlic pieces together and chop them with the knife until they become finely minced garlic. The process for handling ginger is similar. Start by tapping the ginger piece with the back or tip of the knife to loosen it. Then, cut the ginger into small pieces and place the ginger pieces on the cutting board. Chop the ginger with the knife until it becomes finely minced ginger.

4.To prepare a bell pepper, start by removing the seeds. Then, cut the bell pepper into small pieces and place them in a bowl for later use. Next, take a stalk of spring onion and slice it. Add these onion slices to the bowl with the bell pepper. Now, we need a small piece of pork, which should be cut into thick slices. Then, chop these slices into minced meat for later use.

5.Let’s start cooking. Heat some oil in a pan, swirl it around, and then pour out the hot oil. Add some cool oil to the pan, and then add the minced meat that we prepared earlier. Stir-fry the meat until it releases its fat. Add chopped spring onion and ginger, stir-fry for a few seconds until fragrant. Add 15 grams of chopped red pepper and stir a few times. Then, add diced tomatoes and quickly stir-fry until the tomatoes release their juices. Add the bell pepper pieces and continue stir-frying.

6.Pour in some water from the side of the pan and start seasoning. Add 1 gram of black pepper powder, 1 gram of chicken powder, 10 grams of light soy sauce, and 2 grams of dark soy sauce to enhance the color. Increase the heat and bring the sauce to a boil. Then, add enoki mushrooms and cook them in the sauce for 1 minute until they are well flavored. Once done, remove the pan from the heat and arrange the cooked enoki mushrooms neatly on a plate.

7.When arranging the enoki mushrooms on the plate, make sure the root ends are facing outward to showcase their beauty. You can choose to arrange them in two rows to create an orderly and attractive presentation. The final step is to evenly pour the sauce from the pan over the enoki mushrooms. Slowly pour the sauce, ensuring that each enoki mushroom absorbs the flavors. This will enhance the taste and texture of the mushrooms.
