Steps:
1.First, prepare 500g of chicken wings. Rinse the chicken wings in clean water, paying attention to clean the crevices between the wing joints. Then, pat dry the surface of the chicken wings with kitchen paper or a clean cloth. Make shallow cuts on both sides of the wings and gently pound them with the back of a knife to loosen them up.
2.Wash and peel the ginger. Slice the ginger into thin pieces. Wash the scallions and remove the outer layer, keeping only the white part. Cut the white part of the scallions into horsehoof-shaped slices, where the slice is thin but not completely detached, giving it a layered appearance. Also, prepare one bottle of cola for later use.
3.Next, blanch the chicken wings. Add an appropriate amount of cold water and 5g of cooking wine to a pot, then add the chicken wings. Bring it to a boil over high heat to remove any blood and impurities from the chicken wings. Skim off any foam that rises to the surface after the water boils.
