1.Today, I’ll share a recipe for Beef and Tofu. First, let’s prepare the ingredients. Take a block of tofu, open the packaging, and pour the tofu into a bowl. Cut it in half from the middle and then slice it into even thick slices. Cut 300g of beef into thin slices. Soak them in clean water for ten minutes. Now let’s prepare the seasonings. Take two cloves of garlic, flatten them and then chop them into minced garlic. Cut a piece of ginger into ginger paste and set it aside. Wash the soaked beef to remove any blood, then remove the beef and squeeze out the excess water. Place it in a small bowl. Add 1g of salt, 1g of pepper, 1g of sugar, 5g of cooking wine, 5g of light soy sauce, and 2g of dark soy sauce to the beef to marinate and enhance the flavor. Mix it quickly. Then add an egg white and continue stirring. Add some cornstarch and continue beating in one direction until the mixture is well combined. Finally, drizzle a little cooking oil and mix well. Set it aside. Cut two spring onions into green onion and set them aside in a bowl.

3.Heat oil in a pan. Once the oil is hot, add the chopped spring onions and ginger, sauté until fragrant. Add 5g of doubanjiang (chili bean paste) and stir-fry until the oil turns red. Then add an appropriate amount of water and bring it to a boil. Now let’s season the dish. Add 2g of salt, 1g of chicken powder, and 1g of pepper. Add 3g of dark soy sauce to enhance the color. Stir well to dissolve the seasonings. Add the marinated beef slices to the pan and simmer over low heat for one minute. After the beef is cooked, thicken the sauce with a mixture of water and starch over high heat until it becomes thick and sticky.
4.Take the pan off the heat and pour the sauce over the tofu in the soup bowl. Sprinkle chili powder and green onion on top. Heat some oil in the pan again until it reaches about 60% heat, then pour the hot oil over the green onion to instantly release its aroma. Be careful not to add too much oil to avoid greasiness.
