Steps:

1.First, let’s prepare the ingredients. We need one fresh pig liver. Use a knife to make a cut in the middle of the liver, creating a cavity. Boil four salted duck eggs, separate the egg whites and yolks, and keep the yolks. Take out the pig liver and stuff all four egg yolks into the cavity, then use toothpicks to secure the opening. Cut a small piece of ginger into ginger slices, and one stalk of scallion into scallion segments. Add two star anise.

2.Boil water in a pot and add ginger slices, scallion segments, star anise, and the pig liver. Add four grams of salt, a splash of cooking wine to reduce the liver’s gamey taste. Add two grams of salt, one gram of MSG, one gram of sugar, five grams of light soy sauce, two grams of aged vinegar, and adjust the amount of chili oil according to your preference. Add five grams of sesame seeds and sesame oil. Mix everything together with a small spoon. Pour the sauce into a small dish.

4.After 15 minutes, turn off the heat, take out the cooked pig liver, and place it on a cutting board. Remove the toothpicks one by one, then slice the liver into thin pieces and arrange them on a plate for presentation. To make it visually appealing, arrange the slices like the picture below.
