When you taste the grilled eggplant, you will be immediately attracted by its enticing deep purple color. The outer skin of the eggplant becomes slightly charred and golden after being roasted, while the interior remains soft and juicy. Ingredients for dried eggplant:

eggplant 两个
beef mince 200g
Green pepper 1个
Chili pepper 1个
Garlic 5g
Ginger 5g
Bean paste 15g
Salt 3g
Light soy sauce 3ml
Sugar 3g
Mature vinegar 3ml
Steamed fish soy sauce 3ml

Step:

1.Prepare the ingredients. (Dice green pepper, red chili pepper, garlic, and ginger. Clean the eggplant.)

2.Cut the eggplant in half lengthwise and make shallow diagonal cuts (flower-shaped) on the flesh side. Then, proceed to cut the eggplant into chunks.

3.Soak the cut eggplant in clean water for 2 minutes. This helps to prevent the eggplant from absorbing excessive oil during the stir-frying process.

4.Heat oil in a pan until it reaches 150 degrees Celsius. Add the eggplant to the hot oil (make sure to use high heat for deep-frying). Fry the eggplant until it is cooked through and golden brown. Then, remove the fried eggplant from the oil and set it aside for later use.

5.In the same pan, leave a small amount of oil and add minced beef. Stir-fry the minced beef until it is cooked and fragrant. Then, add minced ginger and garlic, as well as chopped green and red peppers, and stir-fry everything together.

6.After stir-frying the minced beef until fragrant, add doubanjiang (fermented bean paste), salt, and light soy sauce to the beef. Then, add white sugar and rice vinegar, and continue stir-frying.

7.Add the fried eggplant in the pot, stir-fry evenly with low heat, and add steamed fish soy sauce.

8.Plate the stir-fried grilled eggplant and it is ready to be served. Now, you can savor this delicious dish to your heart’s content!

 

Tips:

1.After putting the eggplant in the pan, use low heat because no water should be added throughout the process. The goal is to slowly cook the eggplant using its own moisture.

2.Quick stir-frying: The key to making dry-fried eggplant is to stir-fry it quickly to maintain its shape and texture. Avoid cooking it for too long to prevent the eggplant from becoming overly soft.
