Introduction: Green onions, also known as scallions, have a spicy taste. They have a stimulating effect on sweat glands. The underground bulbs of green onions are solitary and cylindrical, with some roots swelling above the base, forming an oval-cylindrical shape. The outer skin of the bulbs is white, with slight reddish-brown color in some cases. The entire green onion has a tubular structure that becomes narrower from the bottom to the top. The flower stalk is cylindrical and hollow, gradually thickening from the middle part downwards, and tapering towards the top. The lower part of the flower stalk is wrapped in a leaf sheath, and the top forms a spherical umbel-shaped cluster of small flowers arranged in a radiating pattern. The petals are white, nearly ovate, and gradually pointed at the top. Green onions flower and bear fruit from April to July. Green onions are a low-calorie, high-fiber vegetable, containing only 40 calories per 100 grams. They can stimulate gastric secretion, improve appetite, and have antibacterial and antiviral effects. They can prevent colds caused by wind and cold, and they also inhibit the growth of cancer cells. It is preferable to choose green onions with consistent color in the stem and leaf parts.
