Ingredients for stir-frying three shreds

 Steps:

1.Prepare one carrot by peeling off the outer skin and cutting it into thin strips, adding a crunchy texture and a pop of color to the dish. Remove the seeds from the green pepper and cut it into thin strips as well, adding a crisp texture and a touch of green. Meanwhile, slice the scallions, ginger, garlic, and dried chili, which will bring a fragrant and spicy flavor to the dish, enhancing its overall taste.

2.Cut the tofu skin into thin strips. Next, add an appropriate amount of water to a pot and wait for it to boil. Once the water is boiling, blanch the cut tofu skin and carrot strips in the pot for about 30 seconds. Blanching helps remove impurities from the tofu skin and carrots, leaving them tender and smooth. After blanching, rinse the tofu skin and carrot strips with cold water to clean them thoroughly for later use.

3.Heat some oil in a hot pan and sauté the sliced scallions, ginger, and garlic until fragrant, releasing their rich aroma. Then quickly add the carrot strips and stir-fry for about 30 seconds to maintain their crispness and sweetness. Next, add the blanched tofu skin to the pan and continue to stir-fry for around 10 seconds to mix the tofu skin with the carrots. Finally, remove the pan from the heat and season with salt, sugar, chicken powder, and soy sauce to taste, adjusting the seasoning according to personal preference. Stir everything together evenly. Continue to stir-fry for another 10 seconds to allow all the ingredients to absorb the flavors.

Tips:
