Ingredients for leek and egg vermicelli

Silk noodles 70g
Leek 90g
Red pepper 20g
Egg two
Salt 6g
Green onion 4g
Garlic 4g
Dried chilli 5g
Chicken powder 1g
Pepper powder 1g
Light soy sauce 5g
Dark soy sauce 2g

Steps:

1.First, prepare the ingredients. Soak a bundle of glass noodles in hot water for 15 minutes. Cut a bunch of washed leeks into segments and place them in a bowl, adding some shredded red bell pepper for color. Remove the soaked glass noodles and set aside. Slice a section of scallions into julienne pieces, chop a few cloves of garlic into slices, and add a small handful of dried chili peppers.

2.In a bowl, crack two fresh eggs. Adjust the quantity according to personal preference. Add a pinch of salt to enhance the flavor of the eggs. Use a whisk or chopsticks to beat the eggs until well-mixed. Gradually add some warm water while stirring to adjust the consistency of the egg mixture. The beaten egg mixture can be used to make various delicious dishes.

3.Heat oil in a pan. When the oil is around 60% hot and starts smoking, pour in the beaten egg mixture, quickly stir and scramble until evenly cooked. Remove the eggs from the pan quickly to avoid overcooking.

4.Heat oil in the pan again. Once hot, add the seasonings to release a fragrant and spicy aroma. Add the dried chili peppers and stir-fry on medium-high heat until fragrant. Add the leeks and continue stir-frying rapidly until slightly tender. Incorporate the soaked glass noodles and stir-fry until cooked through. Season with 2 grams of salt, 1 gram of chicken powder, 1 gram of pepper, 5 grams of light soy sauce, and 2 grams of dark soy sauce for color enhancement. Stir-fry on high heat to mix the seasonings thoroughly. Add the previously stir-fried eggs, drizzle a small amount of sesame oil for shine, and stir well. Once evenly mixed, transfer to a serving dish.

Tips

1.If the glass noodles are too long, you can cut them into shorter pieces before stir-frying to ensure better mixing.
2.To preserve the crisp and tender texture of the leeks, cut them into longer segments and minimize the stir-frying time.
3.Use high heat for a quick stir-fry of the eggs and glass noodles to retain the noodles’ elasticity and smooth texture.

It is not only a delectable cuisine but also a healthy dish. While indulging in the flavors, it can also contribute to your physical well-being. Leek, Egg, and Glass Noodle Stir-Fry is an unmissable delicacy. Its distinctive flavor and texture leave a lasting impression, and its nutritional value is outstanding. Give it a try and let your taste buds dance with pleasure!
