Ingredients for Fish Flavored Shredded Pork

Pork filletPork fillet 300g
Carrot one
Lentinus edodes three
Wood ear fungus 45g
Green pepper one
Ginger 10g
Cooking wine 8g
Salt 4g
Edible oil 12g
Starch 22g

Steps:
1.Prepare the ingredients, soak the wood ear fungus in boiling water, and wash the vegetables thoroughly for later use.

2.Cut the pork tenderloin into thin strips.

3.Add salt and pepper to remove any fishy taste, then add an appropriate amount of water to make the meat firm. Continue by adding dark soy sauce for color and incorporate egg white for a smoother texture. Finally, use your hands to mix everything evenly.

4.When the mixture becomes sticky, add starch to lock in the moisture of the meat. Then add a moderate amount of cooking oil and mix well to prevent sticking when frying. Finally, set it aside as shown in the picture.

5.Next, julienne the carrots, soaked wood ear fungus, mushrooms, and green bell peppers for later use.

6.Prepare the sauce: In a bowl, put two tablespoons of white sugar, four tablespoons of rice vinegar, two tablespoons of light soy sauce, one tablespoon of dark soy sauce. Add some pepper powder and a small amount of oil. Finally, add one tablespoon of water starch and mix everything well. Set it aside.

7.Heat oil in a pan until it reaches 70% heat, then add the shredded pork and stir-fry until it separates. Remove from the oil and drain off excess oil.

8.Boil water in the pan and blanch the prepared vegetables for one minute. Remove and drain off excess water.

9.Add an appropriate amount of cooking oil to the pan, then sauté the minced scallions, ginger, and garlic until fragrant.

10.After sautéing, add chili oil, followed by the prepared vegetables and shredded pork. Stir-fry for 30 seconds, then pour in the prepared sauce.

10.Finally, cook over high heat until the sauce thickens. It is now ready to serve.

1.Adjust the seasoning according to personal taste based on the amount of ingredients.
