Ingredients for Dorayaki:

mlik 100ml
low-gluten flour 70g
Cocoa powder 50g
Baking powder 10g
Rice wine 10ml
Cream 200ml
Chestnut 100g

Steps:

1.Crack an egg into a bowl and add approximately 50g of granulated sugar and 10g of honey. Mix well with a spoon or chopsticks until the egg, sugar, and honey are completely blended.

2.Add approximately 100ml of milk to the bowl, followed by approximately 70g of cake flour, 30g of cocoa powder, 10g of baking powder, and 10ml of rice wine. Stir well with a mixer or spoon until all the ingredients are thoroughly mixed and form a smooth batter. Refrigerate for 30 minutes.

3.Heat a pan over medium heat until evenly hot. Pour the prepared batter into the pan, forming small round pancakes, ensuring they are evenly distributed and of appropriate size. When the edges start to dry and the center is still slightly moist, flip them using a spatula or flipping tool and cook the other side. If needed, cook them in batches to ensure all the pancakes are properly cooked and evenly heated. Continue cooking each pancake until they turn golden and fluffy, with both sides evenly cooked. Once all the pancakes are cooked, remove them from the pan and place them on a plate.

4.Prepare another empty bowl and pour approximately 200ml of cream into it. Add approximately 20g of granulated sugar and 20g of cocoa powder. Use a mixer to whip the cream, sugar, and cocoa powder together at medium-low speed until it forms a foamy mixture. Once the mixture has reached a foamy consistency, take out the cooked chestnuts. Add the chestnuts to the mixture and mix well again with the mixer, ensuring that the chestnuts are fully incorporated into the cream, sugar, and cocoa powder mixture. Continue mixing until the chestnuts are evenly distributed and perfectly blended with the cream.

5.With the cooked pancakes and the mixed chestnut cream ready, it’s time to assemble the delicious chestnut dorayaki. Place one cooked pancake on a work surface and spread an appropriate amount of the chestnut cream mixture onto the surface using a knife or smooth utensil. Ensure the cream mixture is evenly spread on the pancake to ensure every bite is filled with the rich flavor of chestnuts. Next, gently place another cooked pancake on top of the cream-covered pancake, pressing them together lightly to ensure they stick together and the cream mixture is evenly distributed in the middle.
