Steps:

1.Prepare the ingredients. Clean and wash fresh spring onions. Choose fresh shiitake mushrooms, wash them and remove the stems. Make cross-shaped incisions on the surface of the mushrooms to allow better absorption of the soup. Peel and slice fresh ginger. Wash and remove the pits from plump red dates, set aside. Soak 30g of Cordyceps flower in cold water for 30 minutes.

2.Select a large chicken leg, clean it and remove excess fat and fascia. Place the chicken leg in cold water, and once the water boils, skim off the surface foam. Add a little cooking wine and continue boiling until the chicken leg is fully cooked. Remove and set aside.
